Dampfkochvorrichtung für Grossküchen Die Erfindung bezieht sich auf eine Dampfkochvor- richtung für Grossküchen, wie beispielsweise für grös- sere Restaurants, Hotels, Kantinen, Kasernen, Spitäler etc.
Derartige Dampfkochvorrichtungen eignen sich be- kanntlich für rasches und vitaminschonendes Kochen unter Dampfdruck. Es können damit grosse Mengen der verschiedensten Nahrungsmittel wie z. B. Gemüse al ler Art, Kartoffeln, Fleisch etc. in kürzester Zeit Bar gekocht werden.
Heute sind für solche Kochvorrichtungen Schraub verschlüsse bekannt. Am Rand des Deckels sind je nach Grösse der Kochvorrichtung 4-6 solcher Verschlüsse vorhanden. Das Schliessen derartiger Schraubenver- verschlüsse ist umständlich und zeitraubend, da jeder Verschluss separat von Hand angezogen werden muss. Vielfach sind die einzelnen Schraubverschlüsse mit Fe dern versehen, die die Klauen in geöffnetem Zustand leicht nach aussen drücken, damit diese beim Schlies- sen des Deckels nicht auf dem Rand des Kochkessels aufstehen können.
In diesem Falle ist es nötig, dass während dem Verschrauben des Deckels die Klaue des Verschlusselementes gleichzeitig unter den Rand des Kochkessels gedrückt wird. Dies bringt den Nachteil, dass von einer Person nicht gleichzeitig zwei Schraub verschlüsse bedient werden können, so dass das Ver- schliessen des Kochkessels sehr zeitraubend ist. Wei terhin ist bei den bekannten Schraubverschlüssen von Nachteil, dass jedes Verschlusselement mit einer Sicherung gegen unbeabsichtigtes öffnen des Deckels un ter Dampfdruck versehen sein muss.
Es sind ferner Verschlussvorrichtungen bekannt, die als Schnappverschlüsse ausgebildet sind. Diese ha ben den Nachteil, dass jedes Verschlusselement beim öffnen des Deckels separat in eine arretierte öffnungs- stellung gebracht werden muss. Die Bedienung wird da durch auch bei dieser Verschlussart umständlich und zeitraubend.
Bei derartigen Schnappverschlüssen müs sen ferner Vorrichtungen vorhanden sein, die es erlau ben, jedes einzelne Verschlusselement so zu justieren, dass die bei diesen grossen Kochvorrichtungen vor handene lange Dichtung am ganzen Umfang des Dek- kels gleichmässig abdichtet.
Bei beiden vorgenannten bekannten Verschlussvor- richtungen ist ferner nachteilig, dass die für ein ein wandfreies Funktionieren notwendige Wartung dieser re lativ komplizierten Gebilde umständlich ist.
Im weiteren sind Verschlussvorrichtungen bekannt, die aus keilförmigen Klauen bestehen welche am Rand des Deckels und der Kochvorrichtung' angebracht sind. Durch Drehen des Deckels werden diese Klauen inein ander eingeführt und infolge ihrer keilförmigen Aus bildung gegeneinander verspannt. Dadurch wird die zwischen dem Deckel und dem Kochvorrichtungsrand vorhandene Dichtung so gepresst, dass entlang dem ganzen Umfang eine einwandfreie Abdichtung erfolgt.
Ein Nachteil dieser Verschlussart besteht darin, dass zum Drehen des Deckels in die geschlossene Stellung für das Verspannen der Klauen und damit für das Zu sammenpressen der Dichtung ein relativ grosser Kraft aufwand nötig ist.
Der Erfindung liegt nun die Aufgabe zugrunde, die se Nachteile zu beseitigen. Dies geschieht erfindungs gemäss dadurch, dass bei einer Dampfkochvorrichtung für Grossküchen, bei welcher zum dampfdichten Ab schliessen des Deckels an diesem und am Kochvor- richtungsrand Verschlussvorrichtungen vorhanden sind, die durch Drehen des Deckels in und ausser Ein- griff kommen,
zwischen den Verschlussvorrichtungen ein Spiel rechtwinklig zur Ebene der Abschlussöffnung ge bildet ist und eine zwischen Deckel und Kochvorrich- tung vorhandene Dichtung rechtwinklig zur Ebene der Abschlussöffnung elastisch ist. Dadurch wird erreicht, dass sich der Deckel von einer Person durch Drehen um einen begrenzten Winkel ohne Kraftaufwand leicht in die geschlossene Lage bringen lässt.
Dabei greifen alle Verschlussvorrichtungen gleichzeitig ineinander ein, so dass das umständliche und zeitraubende Schliessen je des einzelnen Verschlusselementes wegfällt.
Zweckmässigerweise sind die Verschlussvorrichtun- gen als Segmentnocken ausgebildet, die am Umfang des Deckels und des Kochvorrichtungsrandes verteilt angebracht sind. Derartige Segmentnocken sind sehr einfache Gebilde, die in der Herstellung billig sind und ausser der einfachen Reinigung keiner weiteren Wartung bedürfen.
Mit Vorteil ist die elastische Dichtung, die am Dek- kel oder am Kochvorrichtungsrand befestigt ist, eine Lippendichtung. Dadurch wird erreicht dass trotzdem der Deckel während dem Entstehen des Dampfdruckes in der Kochvorrichtung um das Spiel der Segmentnok- ken angehoben wird, die Kochvorrichtung einwandfrei dampfdicht abgeschlossen ist.
Durch die Ausbildung der mit Spiel ineinandergrei- fenden Segmentnocken im Zusammenhang mit einer Lippendichtung zwischen Deckel und Kochvorrichtung fallen Justiervorrichtungen an den einzelnen Verschluss- elementen weg,
da die Fabrikationstoleranzen innerhalb der Grösse des Spieles zwischen den Segmentnocken ge halten werden können und die Lippendichtung etwa vorhandene Ungleichheiten auszugleichen imstande ist.
In weiterer Ausbildung des Erfindungsgegenstan- des kann in der Nähe des Zentrums des Deckels eine Sicherheitsvorrichtung angebracht sein, die das Entste hen eines Dampfdruckes nur gestattet, wenn die Ver- schlussvorrichtungen am Deckel und am Kochvorrich- tungsrand in der richtigen Eingriffslage stehen. Mit Vor teil ist diese Sicherheitsvorrichtung als Verdrehungs schutz ausgeführt, so dass der Deckel nicht unbeabsich tigt in seine geöffnete Stellung gedreht werden kann, wenn die Kochvorrichtung unter Dampfdruck steht.
Dadurch wird erreicht, dass die Kochvorrichtung durch nur eine sehr einfach ausgebildete Sicherheitsvorrich tung, welche mit einem einzigen Handgriff geschlossen bzw. geöffnet werden kann, einwandfrei gegen unbeab sichtigtes Öffnen geschützt ist.
Ein Ausführungsbeispiel des Erfindungsgegenstan- des ist in der Zeichnung dargestellt. Es zeigt: Fig. 1 den oberen Teil einer Dampfkochvorrich- tung mit Deckel in Ansicht, Fig. 2 den Grundriss von Fig. 1, Fig. 3 einen Schnitt durch eine Verschlussvorrich- tung im dampflosen Zustand der Kochvorrichtung,
Fig. 4 einen Schnitt durch eine Verschlussvorrich tung, wenn die Kochvorrichtung unter Dampfdruck steht, Fig. 5 die perspektivische Ansicht einer Verschluss vorrichtung in geöffnetem Zustand, Fig. 6 die Ansicht einer Sicherheitsvorrichtung und Fig. 7 die Seitenansicht von Fig. 6.
Am Umfang der Dampfkochvorrichtung 1 und des Deckels 2 sind Verschlussvorrichtungen befestigt. Die se bestehen, wie in Fig. 5 speziell gezeigt ist, aus Seg- mentnocken 3, die am Kochvorrichtungsrand 4 und Segmentnocken 5, die am Umfang des Deckels 2 ange bracht sind.
In der dargestellten Ausführung sind die Segmentnocken 3 am Umfang des Kochvorrichtungs- randes 4 klauenartig ausgebildet.
Der Deckel 2 ist an einer Haltevorrichtung 6 um eine horizontale Achse auf- und abschwenkbar sowie um eine rechtwinklig zur Abschlussebene des Deckels 2 stehende zentrale Ach se um einen begrenzten Winkel drehbar angebracht. In Fig. 1 ist in strichpunktierter Linienführung die auf geschwenkte Stellung des Deckels 2 dargestellt.
Beim Schliessen der Kochvorrichtung wird der Deckel 2 in seine abgeschwenkte Stellung und durch Drehen um den begrenzten Winkel um seine rechtwinklig zur Abschluss- ebene stehende zentrale Achse in die geschlossene La ge gebracht. Dabei werden die Segmentnocken 3 und 5 der vier am Umfang der Kochvorrichtung 1 und des Deckels 2 verteilten Verschlussvorrichtungen gleichzei tig mit Spiel ineinander eingeführt, wie in Fig. 3 er sichtlich ist.
Infolge dieses Spieles zwischen den Seg- mentnocken 3 und 5 kann der Deckel 2 praktisch oh ne Kraftaufwand in seine geschlossene Stellung gedreht werden. Während dem Entstehen des Dampfdruckes in der Kochvorrichtung 1 wird der Deckel 2 durch den Druck um das Spiel der Verschlussvorrichtungen an gehoben, bis die Segmentnocken 3 und 5 des Deckels 2 und der Kochvorrichtung 1 aneinander anstehen. Die ser Zustand ist in Fig. 4 dargestellt.
Eine weiche Lip pendichtung 7 sorgt dafür dass die Kochvorrichtung 1, obschon der Deckel 2 während dem Entstehen des Dampfdruckes um das Spiel der Verschlussvorrichtung angehoben wird, einwandfrei dampfdicht verschlossen ist. Im Zentrum des Deckels 2 ist eine Sicherheitsvor richtung angebracht. Diese besteht im wesentlichen aus einem bekannten Sicherheitsventil 8 mit Hebel 9 und Handgriff 10. Das Sicherheitsventil 8 mit dem Hebel 9 und Handgriff 10 ist am Deckel 2 fest angebracht. An einer Rippe 11 der Haltevorrichtung 6 des Deckels 2 ist eine Nut 12 angebracht.
Die relative Stellung des mit dem Deckel mitdrehenden Hebels 9 gegenüber die ser feststehenden Nut 12 ist dadurch von der Drehlage des Deckels 2 abhängig. Der Hebel 9 steht nur in der jenigen Drehlage des Deckels 2, in welcher die Ver- schlussvorrichtung mit den Segmentnocken 3 und 5 an der Kochvorrichtung 1 und am Deckel 2 einwandfrei in Eingriff stehen, der Nut 12 gegenüber und kann in diese eingelegt werden.
Das Einlegen des Hebels 9 in die Nut 12 bewirkt ein Schliessen einer in der Zeich nung nicht dargestellten Dampfaustrittsöffnung des Si- cherheitsventiles 8, so dass in der Kochvorrichtung nur in diesem Zustande ein Dampfdruck entstehen kann. Der Hebel 9 bildet, eingelegt in die Nut 12, einen ein wandfreien Schutz, der .ein Öffnen des Deckels 2 ver hindert, solange die Dampfaustrittsöffnung des Sicher heitsventiles geschlossen ist, bzw. die Kochvorrichtung unter Dampfdruck steht.
In Fig. 6 und 7 ist die Stel lung des Hebels 9 bei geschlossener Dampfaustritts- Öffnung mit ausgezogener Strichführung und die Stel lung bei geöffneter Dampfaustrittsöffnung strichpunk tiert dargestellt.

In this case, it is necessary that the claw of the closure element is simultaneously pressed under the edge of the cooking kettle while the lid is being screwed on. This has the disadvantage that two screw caps cannot be operated by one person at the same time, so that closing the cooking kettle is very time-consuming. Another disadvantage of the known screw closures is that each closure element must be provided with a safeguard against unintentional opening of the lid under steam pressure.
There are also known locking devices which are designed as snap locks. These have the disadvantage that each closure element must be brought separately into a locked open position when the cover is opened. Operation becomes cumbersome and time-consuming even with this type of closure.
In the case of such snap locks, devices must also be available which allow each individual locking element to be adjusted so that the long seal present in these large cooking devices seals evenly over the entire circumference of the lid.
A further disadvantage of both of the aforementioned known closure devices is that the maintenance of these relatively complicated structures, which is necessary for proper functioning, is laborious.
Closure devices are also known which consist of wedge-shaped claws which are attached to the edge of the lid and the cooking device. By turning the cover, these claws are inserted into one another and braced against each other as a result of their wedge-shaped training. As a result, the seal present between the lid and the edge of the cooking device is pressed in such a way that a perfect seal takes place along the entire circumference.
A disadvantage of this type of closure is that a relatively large amount of force is required to turn the cover into the closed position for bracing the claws and thus for compressing the seal.
The invention is now based on the object of eliminating these disadvantages. According to the invention, this is done in that, in a steam cooking device for large kitchens, in which locking devices are provided on this and on the edge of the cooking device to close the lid in a steam-tight manner, which come into and out of engagement by turning the lid

The closure devices are expediently designed as segment cams which are attached to the periphery of the lid and the edge of the cooking device. Such segment cams are very simple structures that are cheap to manufacture and do not require any maintenance other than simple cleaning.
The elastic seal, which is attached to the lid or to the edge of the cooking device, is advantageously a lip seal. This ensures that the lid is raised by the play of the segment lobes while the steam pressure is being created in the cooking device, and the cooking device is sealed perfectly in a steam-tight manner.
Due to the design of the segment cams that interlock with play in connection with a lip seal between the lid and the cooking device, adjustment devices on the individual locking elements are no longer necessary.
because the manufacturing tolerances can be kept within the size of the game between the segment cams and the lip seal is able to compensate for any inequalities.
In a further development of the subject matter of the invention, a safety device can be attached near the center of the lid, which only allows steam pressure to develop if the locking devices on the lid and on the edge of the cooking device are in the correct engagement position. With part before this safety device is designed as a rotation protection, so that the lid can not be unintentionally taken into its open position when the cooking device is under steam pressure.
This ensures that the cooking device is perfectly protected against unintentional opening by only a very simple safety device which can be closed or opened with a single handle.

Closure devices are attached to the circumference of the steam cooker 1 and the lid 2. As shown specifically in FIG. 5, these consist of segment cams 3 which are attached to the cooking device edge 4 and segment cams 5 which are attached to the circumference of the cover 2.
In the embodiment shown, the segment cams 3 are designed like claws on the circumference of the cooking device edge 4.
The cover 2 can be swiveled up and down on a holding device 6 about a horizontal axis and can be rotated by a limited angle about a central axis standing at right angles to the closing plane of the cover 2. In Fig. 1, the pivoted position of the cover 2 is shown in dash-dotted lines.
When the cooking device is closed, the cover 2 is brought into its swiveled-away position and, by rotating it through the limited angle about its central axis, which is perpendicular to the closing plane, is brought into the closed position. The segment cams 3 and 5 of the four locking devices distributed around the circumference of the cooking device 1 and the lid 2 are simultaneously inserted into one another with play, as can be seen in FIG. 3.
As a result of this play between the segment cams 3 and 5, the cover 2 can be turned into its closed position with practically no expenditure of force. During the creation of the steam pressure in the cooking device 1, the lid 2 is lifted by the pressure by the play of the locking devices until the segment cams 3 and 5 of the lid 2 and the cooking device 1 are in contact with one another. This state is shown in FIG.
A soft lip seal 7 ensures that the cooking device 1, although the lid 2 is raised by the clearance of the locking device during the development of the steam pressure, is properly closed in a steam-tight manner. In the center of the lid 2 a Sicherheitsvor device is attached. This essentially consists of a known safety valve 8 with lever 9 and handle 10. The safety valve 8 with lever 9 and handle 10 is firmly attached to the cover 2. A groove 12 is attached to a rib 11 of the holding device 6 of the cover 2.
The relative position of the co-rotating with the lid lever 9 with respect to the water fixed groove 12 is dependent on the rotational position of the lid 2. The lever 9 is only in the rotational position of the lid 2 in which the locking device with the segment cams 3 and 5 on the cooking device 1 and on the lid 2 are in perfect engagement, opposite the groove 12 and can be inserted into it.
Inserting the lever 9 into the groove 12 closes a steam outlet opening, not shown in the drawing, of the safety valve 8, so that steam pressure can only arise in the cooking device in this state. The lever 9, inserted into the groove 12, forms a wall-free protection that prevents opening of the lid 2 as long as the steam outlet opening of the safety valve is closed or the cooking device is under steam pressure.
In Fig. 6 and 7 the stel ment of the lever 9 with the steam outlet opening is closed with a solid line and the stel ment when the steam outlet opening is open dashed dot shown.
