Description

  

  Verfahren und Form     zur    Herstellung von geformten Speisen mit dekorativem Querschnitt    Meine Erfindung erlaubt die     Herstellung    von ge  formten Speisespezialitäten mit dekorativem Quer  schnitt.  



  Das Verfahren zur Herstellung von     geformten     Speisen mit dekorativem Querschnitt     in    diversen       Speisemassesorten,    z. B.     Glacesorten,    ist dadurch ge  kennzeichnet, dass die äussere Form mit einer Speise  massesorte eingefüllt und verfestigt, z. B. eingefroren,  wird. Hierauf wird nach kurzem     Aufwärmen    der  Kernform dieselbe herausgezogen und der so entstan  dene Hohlraum mit einer weiteren     Speisemassesorte     aufgefüllt und erneut verfestigt, z. B. eingefroren.  Nach der Verfestigung, z. B. durch     Tiefkühlung    für  Glace, kann der Block als Ganzes aus der äusseren  Form genommen werden.

   Werden zwei oder mehr  Kernformen verwendet, so können diese gleichzeitig  oder nacheinander gewärmt und herausgenommen  und die Hohlräume mit beliebigen     Massesorten    auf  gefüllt werden.  



  Nach obigem Verfahren können Formkörper aus  Glace und andern Speisemassen, wie z. B. Fleisch  massen, dekorativ hergestellt werden.  



  Die Form besteht aus einem äusseren Teil (1) und  mindestens einem     zweiten,    einen Hohlkern abgren  zenden und herausnehmbaren Formteil (2).    Beigefügte Zeichnung zeigt Beispiele dieser For  men. Die äusseren und inneren Formteile können jede  beliebige andere Form aufweisen, z. B.: rechteckige,  ovale, runde usw. Die Kerne können mit dem Bo  den der Form fest oder lösbar verbunden sein.

  The mold consists of an outer part (1) and at least one second, removable molded part (2) which delimits a hollow core. The attached drawing shows examples of these forms. The outer and inner moldings can have any other shape, e.g. B .: rectangular, oval, round, etc. The cores can be firmly or detachably connected to the bottom of the form.

Verfahren zur Herstellung von geformten Spei sen mit dekorativem Querschnitt unter Verwendung mehrerer Speisemassen, dadurch gekennzeichnet, dass man in einer ersten, äusseren Form mit mindestens einer hohlen Kernform die eine Speisemassesorte einfüllt, sich verfestigen lässt und darauf nach Er wärmen der Kernform diese entfernt und den so ge bildeten Hohlraum mit einer weiteren Massesorte auffüllt und erneut verfestigen lässt, worauf der im Querschnitt dekorierte Block herausgenommen wer den kann. 11.
