Verfahren zur gleichmässigen Befeuchtung von Getreidekörnern, Leguminosensamen oder Kaffeebohnen mittels Dampf Um Getreidekörner, Leguminosen, Kaffeebohnen und ähnliche Samen mit grossen Feuchtigkeitsmengen zu beladen, die bis an die optimale Aufnahmefähig keit des Gutes für Feuchtigkeit heranreichen, war es bisher nur möglich, dem Gut einen Zusatz der ge wünschten Feuchtigkeitsmenge in Gestalt von Was ser zu geben.
Die gleichmässige Verteilung des zu gesetzten Wassers ist aber erfahrungsgemäss schwie rig, wenn nicht sogar unmöglich, weil das Wasser seiner physikalischen Natur nach nur seiner Schwere folgt und sich in den Behältern, die mit dem betref fenden Gut ausgefüllt sind, am tiefsten Punkte an sammelt und dabei die längere Zeit umspülten Kör nerfrüchte nicht nur befeuchtet, sondern zugleich deren wasserlöslichen Inhaltsstoffe herauslaugt.
Bei Versuchen, eine gleichmässige Befeuchtung des gesamten Gutes mit nassem oder trockenem Dampf zu erreichen, hat sich herausgestellt, dass die Befeuchtung nur bis zu einem gewissen Grade mit tels Dampf durchzuführen ist, und zwar so weit, wie der Dampf kondensationsfähig bleibt. Der Dampf bleibt so lange kondensationsfähig, wie seine Tem peratur höher liegt als die Temperatur des von ihm durchspülten Gutes. Die Temperatur des Gutes steigt aber durch die Dampfeinwirkung in gewisser Zeit auf die Temperatur des Dampfes, und es ist von die sem Punkte an nicht mehr möglich, weitere Dampf mengen auf dem Gute zur Kondensation zu bringen.
Ist der Dampf überhitzt oder trocken, das heisst ist er bei der betreffenden Dampftemperatur nicht gesättigt, so ist bekanntlich eine noch grössere Tem peraturspanne zwischen der Dampftemperatur und der Temperatur des Gutes erforderlich, um den Dampf kondensationsfähig zu machen. Trockener überhitzter Dampf büsst also beim Durchstreichen des mit Feuch- tigkeit zu beladenden Gutes noch eher seine Kon densationsfähigkeit ein.
Gegenstand des vorliegenden Patentes ist ein Ver fahren zur gleichmässigen Befeuchtung von Getreide körnern, Leguminosensamen oder Kaffeebohnen mit tels Dampf, welches dadurch gekennzeichnet ist, dass das mit Dampf zu behandelnde Gut mit oder ohne Unterbrechung der Dampfzufuhr mindestens einmal auf eine Temperatur abgekühlt wird, bei der sich der zugeführte Dampf kondensieren kann. Es hat sich als vorteilhaft erwiesen, die Dampfbehandlung an dem Punkte zu unterbrechen, wo das zu behandelnde Gut Dampftemperatur erreicht hat und das Gut dann für eine gewisse Zeit abzukühlen, sei es durch Zu hilfenahme eines schwachen Kaltluftstromes oder durch äussere Wasserkühlung des Behandlungsappa rates und ähnliche Massnahmen.
Bei erneuter Wieder zufuhr des Dampfes besteht dann die Möglichkeit, weitere Kondensate zu bilden, bis das Gut wiederum die Temperatur des Dampfes erreicht hat. Die Unter brechung der Dampfzufuhr und zwischenzeitliche Abkühlung des Gutes lässt sich beliebig oft wieder holen, und es ist auf diese Weise möglich, eine gleich mässige. Durchfeuchtung des Körnergutes mittels Dampf durchzuführen.
Bei nicht unterbrochener Dämpfung lässt sich erfahrungsgemäss nur etwa 200/a Wasserkondensat in den Körnergütern niederschlagen, ohne dass durch Verlängerung der Behandlung die Kondensatmenge gesteigert werden könnte, weil eben das Aufnahme gut dieselbe Temperatur wie der Dampf angenom men hatte.
Wird nun mit überhitztem Dampf gearbeitet, bei dem das Kondensatbildungsvermögen sowieso we sentlich geringer ist, so sind noch nicht einmal die vorgenannten Kondensatmengen zu erreichen. Hierbei besteht die Möglichkeit, zwecks Abkühlung des Gutes den überhitzten Dampf von Zeit zu Zeit in Wasser zu leiten und mit diesem durch eine Zerstäubungs- düse fliessen zu lassen, so dass Wassernebel mitgeris sen werden, die sich auf dem Behandlungsgut nieder schlagen und von dem Gut aufgenommen werden, ohne zu Auslaugungen und damit Beschädigungen des Gutes zu führen.
In den Patentschriften DRP Nr. 820840, DRP Nr.<B>312528</B> und DRP Nr. 330694 wird bereits eine Dampfbehandlung von Weizen oder Getreidemehl geschildert mit anschliessender Abkühlung des Gutes. Da damit aber nur der Zweck verfolgt wird, die Backfähigkeit und Ergiebigkeit der Mahlerzeugnisse zu erhöhen, erfolgt während der Behandlung keine Unterbrechung der Dampfzufuhr, während welcher das Gut abgekühlt wird.
Für die Verbesserung von Geschmack und Verdaulichkeit von Leguminosen, wie beispielsweise Sojabohnen, Erbsen und derglei chen, hat sich gezeigt, dass die unterbrochene Dämp fung mit dem Ziel einer maximalen Feuchtigkeits aufnahme, die bis zu 40 -bis 50 "/a des Feuchtpro- duktes gehen kann, die besten Effekte erzielt, ohne dass durch längere Behandlung mit nicht kondensa tionsfähigem Dampf die betreffenden Erzeugnisse eine Art Röstgeschmack annehmen und die Legumi- nosen sich biologisch verändern.
Durch die unter brochene Dampfbehandlung wird beim Getreide bei spielsweise erreicht, dass es nicht wie bei einfachem Dämpfen den Geruch und Geschmack nach gebak- kenem Brot annimmt und anderseits nach dem Trocknen und Vermahlen in seiner Backfähigkeit nicht verändert wird.
Das so behandelte Getreide lässt sich durch die Behandlung nicht nur im Ge schmack und seiner Bekömmlichkeit für den Genuss verbessern, sondern auch für seinen technischen Ge brauch beispielsweise als Kleistermasse oder als Ver dickungsmittel für Zeugdruckfarben. Die mit viel Feuchtigkeit beladenen Körnerfrüchte sind besonders geeignet zur Herstellung von geröstetem Kaffee- Ersatz.
Bei Samen, wie beispielsweise den Kaffeeboh nen, erleichtert die unterbrochene Dämpfung eine Geschmacksverbesserung, ohne dass auch hierbei wie bei der üblichen Dämpfung Fremdgeruch und Fremdgeschmack des ungerösteten Gutes auftreten.
Die erhöhte Feuchtigkeitsaufnahme beim Kaffee erleichtert bei den Massnahmen zur Entfernung des Coffeins mittels Lösungsmittelextraktion diese Be handlung und führt in Bruchteilen der sonst üblichen Extraktionszeiten zu einem coffeinfreien Kaffee.
Es hat sich weiterhin gezeigt, dass eine Entfer nung des Coffeins mittels Lösungsmittelextraktion bei Kaffee von besonders knorrigem Charakter wesent lich erleichtert wird, wenn das erfindungsgemässe Verfahren zur Anwendung kommt, ohne dass dabei eine irgendwie in Betracht fallende Auslaugung der für den Geschmack und Genuss wertvollen Inhalts stoffe eintritt. Im Gegensatz zu dem Verfahren der deutschen Patentschrift Nr. 538439 kann durch das erfindungs gemässe Verfahren vornehmlich eine Geschmacksver besserung von Rohkaffee erzielt werden.
Sollte durch die Dampfbehandlung und die biolo gischen Veränderungen der betreffenden Körner früchte und Samen infolge der eintretenden Quellung eine Säuerung der betreffenden Güter eintreten, so kann, wie sich gezeigt hat, durch eine zusätzliche Alkalisierungsbehandlung am Ende der Dampf behandlung sowohl auf der einen Seite das betref fende Gut neutralisiert und auf der andern Seite der Effekt der Dampfbehandlung unter Erhöhung der Quellfähigkeit noch unterstützt werden. Die jeweilige Dampfbehandlung lässt sich durch Druckerhöhung intensivieren bzw. abkürzen.
<I>Beispiele</I> 1.<B>1000</B> kg Sojabohnen werden in einer rotieren den Trommel mit Sattdampf von 0,5 atü behandelt, bis sie die Temperatur des Dampfes erreicht haben, was nach ungefähr 3/4stündlicher Behandlung eingetreten ist und dann durch Abkühlen der Trommel mittels Kaltwasser im Aussenmantel während 1/2 Stunde unter Rotation abgekühlt, worauf erneut Sattdampf auf die Sojabohnen während etwa 1/2 Stunde geleitet wird.
Anschliessend erfolgt wiederum eine Abkühlung wie vorgenannt und eine nochmalige Dämpfung, nach welcher Gesamtbehandlung die dann vorliegenden Sojabohnen etwa 45 % Feuchtigkeit enthalten und im Geruch und Geschmack völlig neutral erscheinen. Das Gut wird wie üblich getrocknet und gemahlen und ist dann besonders bekömmlich und genussfähig.
2. 1000 kg Roggenkörner werden in einer rotie renden Trommel mit überhitztem Dampf bei etwa 1 atü behandelt und nach einer 1/2stündlichen Be handlung durch eine Wasserdüse Wassernebel wäh rend einer 1/.1 Stunde eingespritzt. Dem zu verwen denden Wasser sind auf 100 Liter 0,5 kg Kalium- carbonat zugesetzt, worauf wieder nur 1/1 Stunde Reindampfbehandlung folgt.
Die Behandlung kann zwei- bis dreimal wiederholt werden und ergibt dann einen Roggen mit einer Feuchtigkeit von annähernd 5011o, der in seiner Reaktion neutral bzw. schwach alkalisch ist und nach dem Trocknen und Mahlen ohne weiteres einerseits als Dickungsmittel für Zeug druckfarben und anderseits als Verdünnungsmittel für Gewürzersatzmittel oder als diätetisches Nähr mittel Verwendung finden kann.
3. 1000 kg Kaffeebohnen werden mit Dampf von 0,5 atü 3/.1 Stunde behandelt, nach welcher Zeit für 1/,4 Stunde eine Kühlung des Kaffees mittels Durchleitung eines Kaltluftstromes durch die Trom mel durchgeführt wird, wonach die Dampfbehand lung noch zweimal wiederholt wird. Der Kaffee hat dann etwa 45 o/a Feuchtigkeitsgehalt und lässt sich mit Lösungsmitteln ohne weiteres in 1/3 der Zeit wie bei direkter Dümpfung oder Befeuchtung von Cof- fein befreien.
Die starke Feuchtigkeitsaufnahme bei der unter brochenen Dämpfung ermöglicht zugleich bei Roh kaffeebohnen minderer Qualität die leichtere und bes sere Entfernung des Fremdgeruchs und -geschmacks.

The interrupted steam treatment ensures that grain does not take on the smell and taste of baked bread as it does with simple steaming and, on the other hand, does not change its baking ability after drying and grinding.
