Elektrischer Backofen mit Infrarot-Strahlung Die vorliegende Erfindung betrifft einen elektri schen Backofen mit Infrarot-Strahlung zum Backen von Bäckerei- und Patisserie-Produkten, der in sei nem Backraum parallel zueinander angeordnete Re flektoren von länglicher Form für je einen, eine Quelle von Infrarot-Strahlen darstellenden elektri schen Heizkörper aufweist, deren Strahlen gegen die Sohle des Ofens gerichtet sind, welcher Backofen sich dadurch auszeichnet, dass die Reflektoren einen Teil der Decke des Backraumes bilden.
Die beiliegende Zeichnung zeigt ein Ausführungs beispiel des Erfindungsgegenstandes, und zwar ist: Fig. 1 ein teilweiser Schnitt nach der Linie 1-I in Fig. 2 und Fig. 2 ein Schnitt nach der Linie II-11 in Fig. 1. Der gezeichnete Backofen besitzt den Boden 1, die Decke 2 sowie die beiden Seitenwände 3, 4 und die Rückwand 5 aus einer Wärmespeichermasse. Diese Wände und die Decke sind durch Bleche la, <I>2a,</I> 3a, <I>4a,</I> 5a verkleidet. In der offenen Stirnwand ist die Türe 6 vorgesehen.
An der Stirnwand ist auch der Absaugkanal 7 für Backdämpfe angebracht. Die Decke 2 besitzt Rillen 8, in welche aus Metall, vor teilhaft aus poliertem Chromnickelstahl bestehende Reflektoren 9 eingebracht sind, und zwar so, dass diese auf ihrem ganzen Profil an der Decke 2 an liegen und somit einen Teil derselben bilden.
An den Seitenwänden 3, 4 sowie an der Rück wand 5 sind nahe ihres obern Endes L-Eisen 10, 11, 12 befestigt, auf die das gelochte Blech 13 aufgelegt ist. Dieses stützt sich ausserdem auf Querstäben 14 ab. Auf das Blech 13 sind vermittels der Träger 15 die Quelle von Infrarot-Strahlen sowie die Ober heizung bildende Heizelemente 16 abgestützt, die bei 17 an eine elektrische Stromquelle angeschlossen sind. Jedem Reflektor ist ein derartiges Heizelement zugeordnet. Die Reflektoren 9 sind an ihrem rück- wärtigen Ende auf dem Rillenprofil angepassten Trä gern 18 abgestützt, während ihre vordern Enden mit tels der Schrauben 19 an Vorsprüngen 20 ange schraubt sind.
Für die Unterheizung sind im Boden 1 die Heizelemente 21 eingelassen. Die Sohle des Ofens ist mit Platten 22 belegt.
Beim gezeichneten Beispiel verlaufen die Re flektoren von länglicher Form wie auch die zugeord neten Heizelemente parallel zu den Seitenwänden 3, 4 des Ofens. Es ist aber auch denkbar, die Reflek toren und die Heizelemente parallel zu der Front wand des Ofens anzuordnen. Bei beiden Ausführun gen sind die Strahlen der Reflektoren gegen die Sohle des Bodens gerichtet.
Statt mit Reflektoren aus Metall könnte der Ofen mit Reflektoren aus Glas ausgerüstet sein. Zweck mässig sind die Platten 22, welche die Sohle des Bodens kleiden, von dunkler Farbe.
Bei der Erstellung des Backofens wird vorteilhaf- terweise so vorgegangen, dass die Reflektoren vor dem Einbau bzw. vor dem Einguss der Speichermasse über der Oberheizung auf die Träger montiert wer den. Dadurch ist eine vollständige Anschmiegung der Reflektoren an die Speichermasse gesichert sowie auch ein guter Wärmeübergang in die letztere. Diese Ausbildung ermöglicht jederzeit ein Auswechseln der Reflektoren.
Aus poliertem Chromnickelstahl bestehende Re flektoren haben den Vorteil, dass sie eine intensive Bestrahlung des Backgutes gewährleisten.

The heating elements 21 are embedded in the floor 1 for underheating. The bottom of the furnace is covered with plates 22.
In the example shown, the reflectors of an elongated shape as well as the zugeord designated heating elements run parallel to the side walls 3, 4 of the furnace. But it is also conceivable to arrange the reflectors and the heating elements parallel to the front wall of the furnace. In both versions, the rays of the reflectors are directed against the bottom of the floor.
Instead of reflectors made of metal, the furnace could be equipped with reflectors made of glass. The plates 22 which clothe the sole of the floor are expediently dark in color.
When constructing the oven, it is advantageous to proceed in such a way that the reflectors are mounted on the carrier above the top heater before installation or before the storage mass is poured in. This ensures that the reflectors nestle completely against the storage mass, as well as good heat transfer into the latter. This training enables the reflectors to be replaced at any time.
Reflectors made of polished chrome-nickel steel have the advantage that they ensure intensive irradiation of the baked goods.
