Verfahren zum Verpacken von Lebensmitteln und anderem verderblichem Gut Es ist bekannt, gewisse Waren verderb- lielier Art, wie Lebensmittel - etwa Fleisch und Käse -, mit einer aus einer oder meh reren Schichten bestehenden Hülle, die das Gut dicht umschliesst, zu versehen. Es ist -eiter bekannt, diese Schichten so zu gestal ten, dass sie die Atmung des Gutes zulassen oder verhindern, je nach Beschaffenheit der Ware und der Bestimmung der Umhüllung.
Eine Möglichkeit, eine Umhüllung, die die Atmung zulässt, dicht zu machen und somit. die Atmung zu unterbinden, bestand bisher nicht. Die besten Hüllen dieser Art werden bekanntlich aus Kunstharz hergestellt, das in Form von eine dünne Schicht bildenden vis kosen Dispersionen, oder dergleichen auf das zu verpackende Gut aufgebracht wird.
Für solelie Kunstharzschichten wird neuerlich mit gutem Erfolge Polyv inylacetat verwendet, dies in Fällen, wo eine Atmung des Cxutes erwünscht ist. Soll eine luftdichte Umschlie ssung erreicht und eine Atmung des Gutes unterbunden werden, so werden die Überzüge unterVerwendung von Polyvinylchlorid, Poly_ vinylidenehlorid oder Acrylderivaten herge stellt.
Bei all diesen Verfahren ist, es bekannt, Emulgatoren, Stabilisatoren und Weichmacher zu verwenden.
Ferner ist bekannt, die Dispersionen bzw. Pasten usw., welche auf die Lebensmittel zum Zwecke der Bildung der Schutzhülle aufge- tragen werden, mit Füllstoffen zu versetzen, wie zum Beispiel Hemizellulose, Stärke usw., um der Schutzschicht die gewünschte Festig keit, Porosität, Streichfähigkeit und so fort zu verleihen, sowie auch um die Durchsichtig keit, der Schutzschicht - für bestimmte Güter - in höherem oder geringerem Masse herab zusetzen.
Die Erfahrung hat gezeigt, dass ein Poly- vinylacetatfilm in hohem Masse wasseremp findlich ist, dies insbesondere in Fällen, wo es sich um Waren handelt, die ein grosses Mass von Eigenfeuchtigkeit haben, und ausser dem noch in feuchten Räumen gelagert wer den müssen. Als Beispiel wird auf frisch er zeugten Käse hingewiesen, wo die Laibe zwar verpackt, aber zur Reifung längere Zeit ge lagert. werden müssen.
Die Laibe sind in höch stem Masse feucht, und die Lagerung erfolgt in Räumen mit relativ hoher Luftfeuchtigkeit, das heisst über 90 /o relativer Feuchtigkeit, In solchen Fällen trocknen Polyvinylacetat- filme im allgemeinen und insbesondere solche mit. feuchtigkeitsempfindlichen Füllstoffen überhaupt nicht; in Fällen, wo eine Trock nung stattfindet, beginnen die Käselaibe in folge der von innen wirkenden Feuchtigkeit und der Luftfeuchtigkeit. feucht und klebrig zu werden, und die Schutzhülle wird milchig.
Die Waren kleben aneinander und an der Un terlage, die Filme werden beschädigt und zer reissen, .die verpackte \Ware wird unansehn- lieh - der Zweck der Verpackung wird nicht. erreicht. In einer solchen Verpackung - ganz abgesehen von den obigen Nachteilen - trock nen Lebensmittel sehr langsam, was ganz be sonders von Nachteil ist bei Fleisch- und Wurstwaren, die raschest nach der Erzeugung versandt werden müssen. In Räumen mit über 90<B>%</B> relativer Luftfeuchtigkeit ist. die Ver wendung von Polyvinylacetatfilmen überhaupt unmöglich, weil, wie gesagt, eine klebrig schmierige Oberfläche entsteht.
In jedem Falle beeinflusst also die durch Feuchtigkeitszu nahme verursachte colloidchemische Verän- derung des Polyvinylacetatfilmsund der Füll Stoffe die Aufgabeerfüllung der Schutzhülle und letzten Endes die Qualität der verpackten Ware. Für diese Erscheinung wurde bisher keine befriedigende Lösung gefunden.
Es wurde nun festgestellt, dass besagte Übel beseitigt. werden können, wenn zur Herstel lung der Umhüllung eine Dispersion verwen det wird, welche ausser Kunstharz eine hydro- phile wachsartige Substanz enthält.. Die Eigen schaft, Wässer aufzunehmen aus ihrer Um gebung, haben viele wachsartige Substanzen, zum Beispiel solche, wie sie in der kosmeti schen Industrie mir Creme-Herstellung ver wendet werden. Der Zusatz von Füllstoffen erübrigt sich infolge der Verwendung von hydrophilen, wachsartigen Substanzen.
In- der Praxis geht man am besten in der Weise vor, dass man aus den üblichen Kunst harzdispensionen und einem passenden hydro- philen wachsartigen Stoff, wie zum Beispiel Lanettewachs oder Bienenwachs oder einem andern wachsartigen .Stoff, auf Stearinalko- hol- oder Stearinesterbasis oder einer Mischung derselben, eine streich-, tauch- oder spritzbare Emulsion herstellt und letztere in irgendeiner Weise auf das zu schützende Gut in dünner Schicht aufträgt.
Beim Trocknen nimmt die dünne Schutzschicht, infolge der Wirkung des in ihr enthaltenen hydrophilen wachsartigen Stoffes, Feuchtigkeit aus der Ware selbst- auf (soweit diese durch die Poren der Hülle nicht entweichen kann), während gleichzeitig der Wassergehalt der Kunstharzdispersion gebun den wird. Diese Übernahme der sonst.
Schaden verursachenden Feuehtigheitsrnengen in den Wachsteilen der Schutzhülle beeinträchtigt weder das gefällige Aussehen noch die Quali tät der Verpackung. In keiner Weise leidet die verpackte Ware, und daher eignet sieh die Verpackung ganz besonders für hoch wertige Lebensmittel, wie teure Fleisch- und Käsesorten, die in der neuen Verpackung dem Verbraucher zugeführt werden können, ohne dass ein Risiko bezüglich N iehtansehnlichwer- dens oder Verderb besteht.
Durch die Mitv erw endung eines hi-ciro- philen wachsartigen Stoffes lassen sieh insbe sondere die Nachteile der bisher bekannten Polyvinylacetatdispersionen beheben: 1. Die Wasserempfindlichkeit des Films ist nicht mehr vorhanden, die Verpackungs filme ändern auch bei Feuehtigkeitseinfluss sieh qualitativ nicht, weder in Farbe, Aus sehen noch Oberflächenbeschaffenheit.
\'. Die Trockenheit wird herabgesetzt, und die Trocknung erfolgt je nach Einrichtung in der Zeit zwischen 3 bis \?1 Stunden.
3. Auch in den feuchtesten Räumen bis zu einer relativen Luftfeuchtigkeit von 97 % erfolgt Trocknung des Films.
In vielen Fällen ist es notwendig, die Waren so zu verpacken, dass ihre Atmung sofort unterbunden wird. In andern Fällen soll eine Atmung der Waren für eine gewisse Zeitspanne ermöglicht. werden, um dann herabgesetzt. oder ganz eingestellt zu werden. Das erstere ist der Fall bei gewissen Fleisch waren, wie zum Beispiel Dauerwürsten; das letztere bei Käsesorten, bei denen zwecks Reifung die Atmung eine Zeitlans begün stigt werden soll, wonach sie ganz eingestellt werden muss. Mit dem Verfahren gemäss der Erfindung ist es nun möglich, die besagten gewünschten Effekte zu erreichen.
Bei Käsesorten, die eine Reifung durch machen sollen, trägt man die Schutzhülle zweckmässig in bekannter Weise auf, lässt die Laibe ruhig liegen und reifen, um nach erfolgter Reifung in sechs Wochen bis zu drei Monaten die verpackte Ware eine Zeit lang einer erhöhten Temperatur - bis zu 60 C oder bis zum Schmelzpunkt des ver- wendeten wachsartigen Stoffes - auszuset zen, wodurch die Wachspartikel zerfliessen und die Poren der Schicht als Ganzes absolut schliessen. Somit wird die Hülle luft-, gas und dampfundurchlässig und verhindert das Atmen des verpackten Käses.
Bei Wurst-, Selch- und Fleischwaren wird die Hülle vor zugsweise durch Tauchen auf kaltem Wege aufgebracht und die Trocknung ohne Wärme zufuhr bei normaler Raumtemperatur, even tuell durch Windzusatz, wobei die so verpack ten Waren Atmung behalten, durchgeführt. Bei den meisten Wurst- und Selchwaren er folgt am besten sofort anschliessend nach Trocknung des Films eine Erwärmung auf kurze Zeit zum Zweck des Zerschmelzens des Films und hermetischen Abschlusses. Nur bei Dauerwürsten und ähnlichen Produkten muss eine Frist zum Reifen gegeben werden, meist 11 Tage bis 3 -N%'ochen; es erfolgt. der Wärme prozess dann im gegebenen Zeitpunkt.
Es gibt heikle Fleisch- und Wurstprodukte, die einer Erwärmung überhaupt nicht ausgesetzt werden dürfen. In. solchen Fällen verwendet man als Kunstharz am besten Polyvinyliden- ehlorid.
Es ist nicht unbedingt. notwendig, die Schutzhülle in bekannter Weise direkt auf das zu verpackende Gut aufzutragen. Es kann auch ein Zwischenträger verwendet wer den. plan kann die Schicht. auf blattförmiges Trägermaterial, zum Beispiel Papier oder ein Gewebe, auftragen, um dieses dann zur Verpackung der zu verpackenden Güter zu verwenden. Beim Auftragen einer solchen Dispersion auf Kunststoffolien schliesst. die Masse die Poren der Folien und macht. sie gasdicht. Die Masse eignet sieh weiter zum Auftrag auf Metall folien zur Isolierung letzterer. Der Auftrag erfolgt durch Aufspritzen oder Streichen bzw. durch Übertragen von Auftragrolle auf Auf tragrolle.
Die aufgetragene Schicht wird im Trockenkanal getrocknet, und zwar auf der halben Strecke mittels Kaltluft, worauf in der zweiten Hälfte Warmluft, benutzt. wird, wo durch der vorher getrocknete Film durch Zerschnielzung Luft- und gasdicht wird.
