Composition édulcorante La présente invention se rapporte à une composition édulcorante.
Il a été constaté qu'une personne sur trois ou quatre ressent un arrière-goût amer ou métallique lorsqu'elle goûte de la saccharine. Ces personnes ressentent cet arrière-goût même avec des concentrations de saccharine relati vement faibles, auxquelles les autres personnes ne trouvent qu'un goût sucré. Presque tout le monde éprouve cet arrière-goût amer ou métal lique en absorbant de la saccharine à une concentration supérieure à 0,08%. Ce goût désagréable a pour effet de limiter sérieuse ment les possibilités d'employer la saccharine comme agent d'adoucissement non calorifique.
En particulier, ce goût empêche d'employer la saccharine en concentrations assez élevées pour obtenir un degré de douceur tel que celui demandé pour les fruits confits, les ice-cream, les gommes à mâcher, les gelées, les confitures et autres aliments ou produits de confiserie dans lesquels la teneur en sucre doit normale ment être très élevée.
11 est aussi bien connu dans cette branche d'utiliser un agent adoucissant non calorifique connu sous le nom de cyclamate de sodium ou cyclamate de calcium, et que l'on peut obtenir dans le commerce, de la Abbott Laboratories sous la marque Sucaryl . Ces matières se sont trouvées être des agents d'adoucissement très satisfaisants dans les fai- bles concentrations allant jusqu'à environ 0,8,
% pour le cyclamate de sodium, et jusqu'à en- viron 0,5 % pour le cyclamate de calcium. Dans les concentrations susindiquées, ces cy- clamates sont parfaitement doux, mais ils ne le sont pas assez pour assurer le haut degré de douceur exigé pour des articles de confi serie et les produits très doux tels que les gelées et les confitures.
L'invention a pour objet une composition édulcorante, utilisable en quantité propre à produire une douceur égale à celle de hautes concentrations de sucre, sans faire apparaître un arrière-goût dû à l'un ou l'autre de ces deux ingrédients, et grâce à laquelle l'arrière- goût amer caractéristique de la saccharine est masqué ou annihilé pour les personnes qui ressentent un goût amer même avec de faibles concentrations de saccharine. Cette composi tion est caractérisée en ce qu'elle est constituée au moins en partie par un cyclamate physio logiquement acceptable et de 1a saccharine.
Le rapport préféré du cyclamate à la saccharine est d'au moins 2 parties en poids de cyclamate pour une partie en poids de saccharine.
Comme cyclamates physiologiquement ac ceptables, on peut citer notamment ceux de sodium et de calcium. La composition peut être sous forme de mélange sec et pulvérisé des deux ingrédients pouvant être employé tel quel. Ces deux ingré dients peuvent également être granulés à l'aide d'agents de granulation ordinairement utilisés, tel que l'acacia ou la carboxyméthylcellulose, de façon à obtenir un produit granulé s'écou lant librement et exempt de poussière.
La composition peut encore être mise sous forme de tablettes, que l'on prépare ordinairement en comprimant des portions d'un granulé qui peut aussi contenir une ou plusieurs matières produisant l'effervescence. Il est évident que le produit granulé ou le mélange de poudres sèches peut être mis sous toute forme conve nable, par exemple dans une capsule.
Il est excessivement rare de rencontrer des personnes dont on sait qu'elles ressentent ledit arrière-goût de la saccharine, même à des concentrations aussi faibles que 0,02'% p/v, qui ressentent encore cet arrière-goût lorsque la saccharine est présente à une concentration s'élevant jusqu'à 0,1 %,
si celle-ci est accom- pagnée d'au moins environ deux fois son poids d'un cyclamate. Le seuil de l'arrière-goût de la saccharine est aussi, pour la plupart des dégustateurs, élevé d'environ 25 %, de 0,08,% à 0,
1 % par l'addition d'au moins environ deux parties d'un cyclamate pour une partie de saccharine. Par seuil de l'arrière-goût , il faut comprendre le niveau de concentration auquel on commence à ressentir un arrière- g 01 oût amer ou métallique.
De même, le seuil de l'arrière-goût pour le cyclamate de sodium est élevé d'environ 25'% pour la plupart des dégustateurs en employant une partie de sac charine en combinaison avec ce cyclamate.
Dans les exemples ci-dessous, les propor tions sont indiquées en parties en poids, à moins qu'il ne soit spécifié autrement.

Le plus impor tant est que la tablette ne produisait pas d'ar rière-goût même aux personnes sensibles à la saccharine. La tablette était effervescente, ce qui facilitait sa désintégration.

Le caractère remarquable de cette tablette est qu'elle rend possible d'em ployer des concentrations de cyclamate qui donneraient ordinairement un arrière-goût s'il n'y avait que le cyclamate. Apparemment, 1a saccharine élève le seuil d'arrière-goût du cy- clamate. On peut même employer de plus faibles quantités de saccharine, en diminuant jusqu'à environ 0,25 mg dans la formule ci- dessus (le rapport étant alors de 500 parties de cyclamate pour 1 partie de saccharine),
en élevant tout de même le seuil d'arrière-goût du cyclamate. Le cyclamate de calcium peut être substitué au cyclamate de sodium dans le rapport de 5 parties de cyclamate de calcium pour 8 parties de .cyclamate de sodium. Le produit granulé préparé dans cet exem ple peut être employé tel quel comme poudre s'écoulant librement ; il peut aussi être mis en capsules. On peut aussi laisser de côté les ingrédients lubrifiants et qui produisent l'effer vescence et former un produit granulé sem blable à ceux des exemples 2 et 3.
La proportion notable de la population qui, jusqu'à présent, ne pouvait employer la sac charine à cause de son arrière-goût, petit maintenant utiliser la composition selon cette invention, sans ressentir cet arrière-goût. De plus, le seuil d'arrière-goût des cyclamates a été élevé de quelque 25 % pour tous les usages, de sorte qu'il est maintenant possible d'en obtenir un plus haut degré d'adoucisse ment.
Enfin, il est maintenant possible d'obte nir un degré d'adoucissement équivalent à celui d'une solution de sucre à 48 - 60 % sans qu'il y ait d'arrière-goût pour un pourcentage élevé de personnes. Ce haut degré de douceur est égal à deux fois ou plus le degré de dou ceur qui peut être atteint sans arrière-goût, avec le cyclamate ou la saccharine employés seuls.
Ce n'est qu'en utilisant cette compo sition qu'il est possible d'atteindre le degré de douceur voulu pour les fruits confits, les pâtisseries, les ice-cream, les gelées, la gomme à mâcher et autres produits semblables, en utilisant des agents adoucissants non calori fiques.

% for sodium cyclamate, and up to about 0.5% for calcium cyclamate. In the above concentrations, these cyclamates are perfectly sweet, but they are not enough to provide the high degree of sweetness required for confectionery and very mild products such as jellies and jams.
The subject of the invention is a sweetening composition which can be used in an amount capable of producing a sweetness equal to that of high concentrations of sugar, without revealing an aftertaste due to one or the other of these two ingredients, and thanks to in which the characteristic bitter aftertaste of saccharin is masked or annihilated for people who experience a bitter taste even with low concentrations of saccharin. This composition is characterized in that it consists at least in part of a physiologically acceptable cyclamate and saccharin.
The preferred ratio of cyclamate to saccharin is at least 2 parts by weight of cyclamate to one part by weight of saccharin.
As physiologically acceptable cyclamates, mention may in particular be made of those of sodium and calcium. The composition can be in the form of a dry and spray mixture of the two ingredients which can be used as is. These two ingredients can also be granulated with the aid of commonly used granulating agents, such as acacia or carboxymethylcellulose, so as to obtain a granulated product free flowing and free of dust.
The composition can further be formed into tablets, which are ordinarily prepared by compressing portions of a granule which may also contain one or more effervescence-producing materials. It is obvious that the granulated product or the mixture of dry powders can be put in any suitable form, for example in a capsule.
It is exceedingly rare to encounter people who are known to experience said saccharin aftertaste, even at concentrations as low as 0.02% w / v, who still experience this aftertaste when the saccharin is removed. present at a concentration of up to 0.1%,

The remarkable feature of this tablet is that it makes it possible to employ concentrations of cyclamate which would ordinarily give an aftertaste if there were only cyclamate. Apparently saccharin raises the aftertaste threshold of cyclamate. It is even possible to use smaller amounts of saccharin, decreasing to about 0.25 mg in the above formula (the ratio then being 500 parts of cyclamate to 1 part of saccharin),
while raising all the same the threshold of aftertaste of cyclamate. Calcium cyclamate can be substituted for sodium cyclamate in the ratio of 5 parts of calcium cyclamate to 8 parts of sodium cyclamate. The granulated product prepared in this example can be used as such as a free flowing powder; it can also be put in capsules. It is also possible to leave aside the lubricating ingredients which produce the effervescence and form a granulated product similar to those of Examples 2 and 3.
The significant proportion of the population which, until now, could not use the charine bag because of its aftertaste, can now use the composition according to this invention, without feeling this aftertaste. In addition, the aftertaste threshold of cyclamates has been raised by some 25% for all uses, so that a higher degree of sweetness is now possible.
Finally, it is now possible to obtain a degree of sweetness equivalent to that of a 48-60% sugar solution without there being any aftertaste for a high percentage of people. This high degree of sweetness is twice or more the degree of sweetness which can be achieved without aftertaste, with cyclamate or saccharin employed alone.
It is only by using this composition that it is possible to achieve the desired degree of sweetness for candied fruits, pastries, ice-creams, jellies, chewing gum and other similar products, by using non-calorific softening agents.
