Verfahren und Vorrichtung zur Prüfung von Teig.
Der Backwert des Mehls lässt sieh dureh Backversuche eindeutig nur schwer feststellen, weil diese dureh viele von der das Bakken ausführenden Person herstammende Fehlerquellen beeinfl. ul3t werden. Darum waren schon mehrere bestrebt, durch Bestimmung der verschiedenen physikalisehen Eigenschaften des aus Mein hergestellten Teiges, über die Qualität des Mehls Aufklärung zu erlangen und haben zur Bestimmung der physikalischen Eigenschaften verschiedene Instrumente konstruiert. Einzelne messen den Sehnittwider- stand des Teiges, andere seinen Widerstand beim Durchstechen.
In letzter Zeit wird der gegen eine Zug- kraft geleistete Widerstand des aus Mehl hergestellten Teiges, das heisst t eigentlich die Wasseraufnahmefähigkeit des Mehls und seine unter der angewendeten Zugkraft eingetretene Dehnung, gemessen. Zweifellos sind diese Eigensehal'ten die charakteristischsten für den Teig bzw.
für das Mehl selbst und kann von diesen Eigenschaften auf die Quai- tät des Mehls in jedem Fall eindeutig gefol- gert werden, das hei#t die unter gleichen Um- ständen durchgeführte Messung der aus ver- schiedenen Mehlsorten hergestellten Teige und das Vergleichen der Ergebnisse dieser Mes sungen wird zum erwünschten Erfolg führen.
Gemä# der Erfindung werden die erwähnten Eigenschaften in der Weise gemessen, dass der Teig durch eine Öffnung von ringförmigem Querschnitt durchgezogen wird, wobei der Widerstand und die Dehnung des Teiges in ein Diagramm aufgezeichnet werden.
Auf der beiliegenden Zeichnung ist ein Ausführungsbeispiel der zur Durehführung des erfindungsgemässen Verfahrens geeigneten Vorrichtung in sehematischer Darstellung veranschaulicht.
Bei der dargestellten Ausführungsform ist in Gestell 1 der Vorrichtung eine Waage naeh Art des Berkelsehen Systems angeordnet.
Diese Waage besteht aus einer in an sich be kannter Weise auf waagreehten Kanten ge lagerten Walze 2, auf deren untersten Mantelfläche ein Gegengewicht 3 als der eine Arm der Waage tangential befestigt ist, während auf der reehtseitlichen Mantelflache der Walze 2 eine Schnur 4 als der zweite Arm der Waage gleichfalls tangential befestigt ist, und dieser hält den Kolben 6 mit dem Teller 7, der durch den liaken 5 ein-und aushängbar ist. An dem vordern Ende der Achse der Walze 2 ist der Arm 8 befestigt, der an seinem untern Ende die Schreibvorrichtung 9 trägt.
Zum Ausgleich des Gewichtes des Armes 8 und der Sehreibvorriehtung 9 bzw. zur Einstellung des Ausgangspunktes der Aufzeichnung dient das auf der Stange 10 versehiebbar und feststellbar angeordnete Gegen- gewicht 11.
Das Gestell l ruht auf der auf den Stützen 12 befestigten Platte 13, in der die Öffnung 14 angeordnet ist. Neben den Stützen 12 sind die Führungsschienen 15, die mittels der Hül sen 16 die Platte 17 bei der Auf- und Ab wärtsbewegung mit sich parallel führen. Die Platte 17 trägt den Ring 18, in dessen Wand zwei in L-Form gebrochene und diametral einander gegenüberliegende Schlitze 19 vorgesehen sind.
In den Ring 18 passt der Reifen 20 hinein, in dessen Wand durch Strichlinien dargestellte Locher vorgesehen sind. Über dem Reifen 20 liegt der Festhaltering 21, dessen Öffnung kleiner ist als die des Reifens 20, und von dessen Seiten zwei in die Sehlitze 19 passende Zapfen 22 vorstehen. An die unter der Platte 17 befindliche Scheibe 23 schliesst sich die mit Gewindegang versehene Spindel 24 an, die unten durch vorteilhaft durch Federn 25 zusammengehaltene, zwei- teilige Schraubenmutter 26, 27 umschlossen ist. Die Schraubenmutter endet im Ring 28, an den sich die die Sehraubenspindel umgebende hohle Achse 29 ansehliesst.
Am untern Ende der Achse 29 ist das Kegelrad 30, das mit dem Kegelrad 31 gekuppelt ist. Letzteres sitzt auf einer durch Hand, Feder, Uhrwerk oder Motor angetriebenen Achse 32.
An die Platte 23 vor der Vorrichtung ist das zur Aufnahme des Aufzeichnungsblattes geeignete und sieh mit dem Ring 18 zusammen bewegende ebene e Brett 33 befestigt.
Die Wirkungs-und Gebrauchsweise der Vorrichtung ist die folgende :
Aus dem zu untersuchenden Mehl wird unter Zugabe einer bestimmten Menge Wasser Teig bereitet. Der Kolben 6 wird am Haken fi ausgehängt, auf eine glatte Fläehe gelegt und durch den Reifen 20 umgeben. Dann wird der Teig in den Reifen 20 eingepresst, derart, dass er in der Mitte den Kolben 6 in sieh aufnimmt. Mit einer weiteren, in der Mitte mit einer dem Schaft des Kolbens entsprechenden Öffnung versehenen glatten Platte wird der Teig in den Reifen 20 gut hineingepresst, so, dass er den Reifen überall gleichmä#ig ausfüllt. Unterdessen dringt der überflüssige Teig durch die Seitenöffnungen des Reifens heraus, welche Teile des Teiges dann vom Reifen entfernt werden.
Jetzt lässt man den Teig ungefähr eine halbe Stunde ruhen, dann wird der Reifen 20 in den Ring 18 der Vorrichtung eingesetzt, in diesem mit dem Festhaltering 21 überdeckt und in seiner Lage durch Einsetzen der Zapfen 22 in die Schlitze 19 und dureh Verdrehung des Ringes 21 festgemacht.
Jetzt wird der Ring 18, sei es durch entspreehende Drehung der Achse 32 oder durch Voneinander- entfernen der dureh Feder zusammengehal- tenen Teile der zweiteiligen Schraubenmutter 26 und durch Erhöhung der Schraubenspin- del 24, in eine solche Höhenlage gebracht, dass der am Ende des vorstehenden Kolbensehaftes 6 befindliche Haken 5 an das Ende der Schnur 4 angehängt werden kann. Auf das vor der Vorrichtung befindliehe Brett 33 wird ein Aufzeichnungspapier aufgesetzt und das Gegengewicht 11 so eingestellt, dass der Ausgangspunkt des Bleistiftes am Rande des Papiers immer auf dieselbe Stelle fallen soll.
Durch Drehung der Achse 32 kommt dureh die Kegelradübersetzung die hohle Achse 29 und die an deren Ende befindliehe Sehraub- mutter 26, 27 in Drehbewegung, demzufolge sieh die Schraubenspindel 24 und der auf der am Ende der Spindel befindlichen Seheibe 23 befestigte Ring 18 zusammen mit dem in ihn eingesetzten Teig abwärtsbewegen.
Da der Widerstand des Teiges anfangs am grössten ist, kann dieser die Zugkraft fast gänzlieh über den Kolben 6 der Schnur 4 weitergeben, welche die in Gleichgewicht befindliche Waageeinrichtung und den an dieser befestigten Bleistift 9 ausschwenkt, unterdessen sieh natürlieh das auf das Aufzeichnungsbrett 33 befestigte Papier ein wenig nach unten verschoben hat. Während der Versehiebung aber, da der am Ende des Kolbenschaf- tes 6 befindliche Teller 7 der Bewegung nur in beschränktem Masse folgen kann, zieht sieh der Teig dureh den zwischen dem Kolbenteller 7 und dem Festhaltering 21 frei gebliebenen Querschnitt ; er beginnt sich zu strecken und kann dann nur noeh so viel Kraft auf die Schnur 4 übertragen, als dem Widerstand des Teiges entspricht.
Zu Beginn der Abwärts- bewegung vermag der Teig die Walze 2 mit dem Gegengewieht 3 zu drehen, und zwar so lape, bis das vom Gegengewicht 3 ausgeübte Drehmoment kleiner ist als die Widerstands- kraft des Teiges. Wenn das Drehmoment des Gegengewichtes 3 die Widerstandskraft des verjüngten Teiges überwindet, dann beginnt unter dem Einflu# des Gewichtes 3 die Bück- drehung der Walze2und das I-Ieben des Tellers 7, wobei der Teig vom Teller durch den zwischen dem Teller 7 und dem Festhaltering 21 frei gebliebenen Zwischenraum gezogen wird.
Anfangs bewegen sich daher der Ring 18 und der Teller 7 nach abwärts, nur ist die Bewegung des Tellers 7 langsamer als die des Ringes, später aber, wenn das l) rehmoment des Gegengewiehtes 3 die Widerstandskraft des Teiges überwunden hat, be wegt sieh der Ring 18 weiter naeh abwärts, während der Teller 7 beginnt, sich naeh aufwärts zu bewegen. Die Folge davon ist, dass der Bleistift sich von seiner früheren äussern verschwenkten Lage langsam zurückbewegen wird, so lange, bis der Teig während der Abwärtsbewegung nicht reisst, das heisst sein Widerstand sieh auf Null verringert. Dann steht der Bleistift über der Ausgangslage, die Verschiebung aber zwischen den beiden Lagen ist nichts anderes als die Dehnung des Teiges.
Das auf diese Weise erhaltene Diagramm zeigt somit auf der waagreehten Seite, das heisst auf der Abszisse, den Widerstand des Teiges, auf der senkrechten Seite aber, das hei#t auf der Ordinate, die Dehnung des Teiges. Das Produkt der beiden Faktoren, das heisst die dureh die aufgezeichnete Kurve begrenzte Fläche, stellt die Arbeitsfläche des Teiges dar, da der Widerstand die Kraft und die Dehnung der Weg ist, das heisst sie besteht aus dem Produkt der Kraft und des zurück- gelegten Weges.
Die auf die besehriebene Weise gewon- nenen Angaben, mit aus versehiedenen Mehlen bei denselben Bedingungen hergestellten Teigen aufgenommen, bieten eine Grundlage des Vergleiehes.
In Vorgellendem ist eine beispielsweise angenommene Ausführungsform der Vorrich tung beschrieben, von der natürlieh auch Abweichungen in einigen Einzelheiten möglich sind, ohne dass dabei der Rahmen der Erfindung überschritten werden müssten.

The frame 1 rests on the plate 13 which is fastened to the supports 12 and in which the opening 14 is arranged. In addition to the supports 12, the guide rails 15, which by means of the Hül sen 16, the plate 17 in the upward and downward movement with them in parallel. The plate 17 carries the ring 18, in the wall of which two slots 19 broken in an L shape and diametrically opposite one another are provided.
The tire 20 fits into the ring 18 and has holes in the wall thereof, shown by broken lines. The retaining ring 21, the opening of which is smaller than that of the tire 20, and from the side of which two pegs 22 fitting into the seat heald 19 protrude above the tire 20. The mode of operation and use of the device is as follows:
Dough is prepared from the flour to be examined by adding a certain amount of water. The piston 6 is unhooked from the hook fi, placed on a smooth surface and surrounded by the tire 20. With another smooth plate provided in the middle with an opening corresponding to the shaft of the piston, the dough is pressed well into the tire 20 so that it fills the tire evenly everywhere. Meanwhile, the excess dough penetrates through the side openings of the tire, which parts of the dough are then removed from the tire.
Now the dough is left to rest for about half an hour, then the tire 20 is inserted into the ring 18 of the device, covered in this with the retaining ring 21 and in its position by inserting the pins 22 into the slots 19 and rotating the ring 21 fixed.
Now the ring 18, be it by corresponding rotation of the axis 32 or by removing the parts of the two-part screw nut 26 held together by the spring and by raising the screw spindle 24, is brought to such a height that the at the end of the preceding piston shaft 6 located hook 5 can be attached to the end of the cord 4. At the beginning of the downward movement, the dough is able to rotate the roller 2 with the counterweight 3, namely so lape, until the torque exerted by the counterweight 3 is less than the resistance of the dough. When the torque of the counterweight 3 overcomes the resistance force of the tapered dough, then under the influence of the weight 3 the bending over of the roller 2 and the lifting of the plate 7 begins, whereby the dough is removed from the plate through the between the plate 7 and the retaining ring 21 remaining free space is drawn.
Initially, therefore, the ring 18 and the plate 7 move downwards, only the movement of the plate 7 is slower than that of the ring, but later, when the torque of the counterweight 3 has overcome the resistance of the dough, the ring moves 18 further downwards while the plate 7 begins to move upwards. The consequence of this is that the pencil will slowly move back from its earlier, externally pivoted position, until the dough does not tear during the downward movement, i.e. its resistance is reduced to zero. Then the pencil is over the starting position, but the shift between the two layers is nothing other than the stretching of the dough.
The diagram obtained in this way shows the resistance of the dough on the horizontal side, i.e. on the abscissa, but the elongation of the dough on the vertical side, i.e. on the ordinate. The product of the two factors, i.e. the area bounded by the recorded curve, represents the working surface of the dough, since the resistance is the force and the elongation is the path, i.e. it consists of the product of the force and the path covered .
The information obtained in the manner described, taken with doughs made from different flours under the same conditions, offer a basis for comparison.
