Verfahren zur Herstellung eines nährstoffreichen, pulverförmigen Produktes. Es sind aromatische Pulverpräparate be kannt, welche sich bei Zugabe in wasserhaltige Flüssigkeiten auflösen. Es entstehen damit viohl schmackhafte Getränke, doch sind diese arm an Nährstoffen. und können daher nur Js Genussmittel bewertet werden.
Es sind verschiedene Verfahren zur Her stellung von Pulverpräparaten bekanntge- vrorden, nach welchen Auszüge aus Kaffee oder Tee ins Trockene übergeführt werden. Den meisten ist das Merkmal gemein, dass die Überführung der aromatischen Auszüge zur Trockne durch Destillation im Vakuum er folgt. Besondere Massnahmen bezwecken, die .#Iromastoffe im Pulver zu erhalten resp. dauerhaft zu machen. Wie vorangehend er- @j ä.hnt, beschränkten sich diese Ausführungen auf Genussmittel.
Gegenstand der vorliegenden Erfindung ist nun ein Verfahren zur Herstellung eines nährstoffreichen, pulverförmigen Produktes, das bei Zufügung von wasserhaltigen Flüssig keiten ein Getränk liefert. Dieses Verfahren ist dadurch gekennzeichnet, dass man aroma- si.offhaltiges pflanzliches Material mit einer wässrigen Lösung einer organischen Säure au::
- la.ugt, den aromastoffhaltigen Auszug neu tralisiert, hierauf mit einem mindestens die Feststoffe von Milch enthaltenden Produkt vermischt, und dass man ausserdem zur Ver hinderung des Ausscheidens von Fettstoffen eine Behandlung mit einer alkalisch reagie renden Lösung vornimmt und schliesslich das (Tanze zur Trockne bringt.
Zweckmässig stellt man den Aromaauszug mit Zitronensäure, insbesondere aus Pflanzen produkten gewonnener, her, neutralisiert mit einem Natriumsalz, vermischt den Auszug mit Zucker, Milchpulver und Malzextrakt und behandelt mit einer alkalisch reagierenden Reaktionslösung, welche aus einer organischen Säure und einem Natriiunsalz hergestellt wurde. Der Auszug kann durch mehrere Auslaugungen gewonnen werden, indem man z.
B. geröstetes und gemahlenes pflanzliche; Material zweckmässig zweimal nacheinander mit wässriger Zitronensäure auszieht, die Aus züge mit einem Natriumsalz neutralisiert und hierauf mindestens einen der Auszüge nach Zugabe von Zitronensäure zur Extraktion von neuem Pflanzenmaterial verwendet, wonach man schliesslich erneut neutralisiert. Der neutrali sierte Auszug wird sodann vorteilhaft zur Er haltung des Aromas mit Zucker versetzt und dann über noch nicht ausgelaugtes Pflanzen material gegossen, um das Aroma weiter zu verstärken.
Schliesslich wird beispielsweise der Auszug unter Erhitzen mit Zucker, Voll milchpulver, Milch und - Malzextrakt ver mischt, wobei während des Erhitzens auch die alkalisch reagierende Lösung zugegeben wird. Die alkalisch reagierende Lösung wird vor teilhaft aus einem Natriumphosphat, z. B. Na- triumbiphosphat, Zitronensäure und allen falls Natriumcitrat hergestellt. Das auszulau gende pflanzliche Material kann z.
B. geröste ter Kaffee sein. Bei gleichzeitiger Verwen dung von Kaffee verschiedener Provenienz ist e" zweckmässig, jede Sorte für sich zu behan deln. Als Ausgangsstoffe -eignen sich neben gewöhnlichem Kaffee auch coffeinfreier Kaffee lud Schwarz-, Hagenbutten-, Kräuter-, Mate-Tee usw.
<I>Beispiel 1:</I> 4 kg Gerstenmalz werden geschrotet, mit 4 Liter Wasser gemischt und durch Stehen lassen mazeriert. Nach Zugabe von weiteren 6 Liter Wasser wird bis zu einer Temperatur von 100 C aufgekocht und nach Auspressen der unlöslichen Zellstoffteile auf etwa 36 'Be eingedickt. Man erhält nach dem Eindicken etwa 2r/2 kg Malzextrakt,
welcher mit 1i/2 kg Zucker vermischt wird. Separat werden 2 kg Kaffee fein gemahlen und mit 3 Liter heissem Wasser, dem 35 g Zitronensäiixe beigegeben sind, einer Aluslaugung unterzogen.
Der er haltene Kaffeeauszug wird auf etwa 50 C er wärmt, worauf man 20g Natriumkarbonat zufügt, welches eine Neutralisierung des Kaffeeauszuges bewirkt. Der ausgepresste Kaffeerückstand wird nochmals mit 3 Liter Wasser, enthaltend 40 g Zitronensäure, an gestellt.
Dann gibt man 200g Wasser zu, in welchem 25 g Natrilunkarbonat aufgelöst sind. Wiederum bewirkt das Natriumkarbonat die Neutralisierung des Kaffeeauszuges. Der neutralisierte zweite Kaffeeauszug wird als dann vom Rückstand abgepresst. In den ver- einigten Kaffeeauszügen werden 150 g ge brannter Zucker aufgelöst und das Gemisch auf 75 C erhitzt, um eine Verdickung des Kaffeeauszuges sowie eine Bindung des Aro mas zu erreichen.
Die erhaltene Flüssigkeit wird nochmals über 500 g frisch gerösteten, fein gemahlenen Kaffee gegossen, wobei er weitere Aromastoffe absorbiert. Alsdann wird abgepresst. Im weiteren schwingt man 1 kg Magermilchpulver und 11/2. kg des genannten Malzauszuges ein, unter Zugabe einer Lösung, enthaltend 20 g Zitronensäure und 40g Na triumearbonat.
Das erhaltene Gemisch aus Kaffeeauszug, Malzextrakt, Zucker und Magermilchpulver wird in bekannten Va- külunverdampfern zu Pulver zerstäubt.
<I>Beispiel 2:</I> 2 kg Kaffeeauszug, hergestellt wie in Bei spiel 1 beschrieben, werden 2 kg Zucker bei gegeben. 500 g Vollmilchpulver, 3 Liter auf etwa 25 B6 eingedickte Milch und 11/2 Liter auf 10 B6 eingediekter Kaffee-Extrakt wer den unter Erwärmung und Umrühren mit einander vermengt und unter Zugabe einer alkalisch reagierenden Lösung auf etwa 75 C erhitzt. Diese Lösung wird aus etwa 25 g Natriumcitrat, 75g Natriumbiphosphat und 9 g Zitronensäure hergestellt.
Die erhaltene Mischung wird, wie im Beispiel 1 angeführt, im Vakulun verdampft und zu Pulver zer stäubt.
Das nach dem Beispiel 1 erhaltene Produkt kann man beim Gebrauch warmer Milch zu geben, während dasjenige nach dem Beispiel 2 in warmes @Vasser eingerührt wird und einen fertigen Milchkaffee abgibt. Die erhaltenen Ge tränke sind auf Grund der Zusammensetzung sehr nahrhaft. Es hat sich als vorteilhaft er wiesen, bei der Herstellung von Kaffee-Extrakt enthaltenden Produkten Kaffee von-mehreren Provenienzen heranzuziehen. In diesem Falle röstet man vorteilhaft jede Kaffeesorte für sich.
Nach der Anfertigung eines ersten Aus zuges stellt mann zweckmässig von den er haltenen Rückständen nochmals einen Auszug her, gibt dabei aber nur so viel Wasser zu, als die ausgepressten Rückstände aufzusaugen vermögen. Besonders wirkungsvoll zur Aroma bildung ist es, wenn der erhaltene Auszug nach Zugabe von Zucker nochmals über frisch gerösteten und gemahlenen Kaffee geführt wird.

The product obtained according to example 1 can be used to give warm milk, while that according to example 2 is stirred into warm water and dispenses a finished milk coffee. The drinks obtained are very nutritious because of their composition. It has proven to be advantageous to use coffee from multiple origins in the manufacture of products containing coffee extract. In this case it is advantageous to roast each type of coffee for itself.
After the first extract has been made, it is advisable to make another extract from the residues obtained, but only add as much water as the squeezed out residues are able to absorb. It is particularly effective for creating aroma if the extract obtained is passed over freshly roasted and ground coffee again after adding sugar.
