Template for shaping masses intended for baking. In the confectionery industry, individual sheet metal templates are used to shape masses intended for baking in the desired shape and size. So z. B. also pastries of a certain thickness, such.
B. for Japonais, tongues eto., Produced individually one after the other with the help of a sheet metal template, namely by painting out the filling cavity of the template with the foam or dough and then lifting the template from the pastry item applied to the baking sheet.
However, this working method is very time-consuming and also has the disadvantage that during the long production time, in particular for the foam moldings, the latter collapse and so suffer considerable losses in volume and coverage; which of course greatly affects the quality and appearance of the baked goods.
Sheet metal stencils also have the disadvantage that they are rigid and hard, as a result of which they do not fit the baking sheet well, are difficult to detach from the shaped baking parts and furthermore slide on the baking sheet, whereby the baking sheet and template are smeared, which can sometimes happen - and material losses.
These disadvantages are to be eliminated by the present invention, and this is achieved in that the Scha blone is formed by a mold plate made of elastically flexible material and has a plurality of continuous mold holes.
The stencil plate can consist of a butadiene polymerization product, rubber, or the like elastically flexible work materials, with oil and grease-resistant materials being particularly suitable.
The elastic template or mold plate has the advantage over the sheet metal templates that it hugs the baking sheets completely, so that even with the greatest possible number of shaped holes, the lower edges of the latter lie well against the baking sheet. The good support of the elastic mold plate, connected with the good adhesion of the material chosen for the mold plate, prevents ver slipping on the baking sheet.
Depending on the size of the mold plate, it is possible to use a. To cover half or a whole baking tray with the baking compound in a single operation. By painting out all the shaped holes in the mold plate lying on the baking sheet in a single operation, only a fraction of the working time is required, which was previously necessary when using individual sheet metal molds.
The shortening of the working time for covering the baking tray with the baking compound also has an advantageous effect from an economic point of view, since the compounds, in particular the foamy compounds for the production of the baked goods, can no longer collapse as a result of the rapid working process.
Since the mold plate cannot slide easily on the baking sheet, a. The masses are prevented from smearing when they are applied to the baking sheet, thus saving material.
By using a mold plate with the maximum number of mold holes, the best possible utilization of the baking tray is achieved by stringing together the baking materials intended for baking as closely as possible and at regular intervals. The capacity of the baking tray is considerably increased when using such a mold plate.
It is particularly advantageous to form the shape of the holes expanded conically downwards. This measure enables the mold plate to be easily detached from the molded baking masses. This is particularly important for baked goods for which relatively thick materials are required. The elastic mold plate is also very easy to clean.
In the drawing, two exemplary embodiments of the subject of the invention are shown. It shows: Fig. 1 a partial view of a template designed as an elastic mold plate, Fig. 2 a cross section along the line I-I in Fig. 1,
and FIG. 3 shows a cross section through a second embodiment of the template designed as an elastic mold plate.
The template shown for forming baking masses intended for baking. be is made of an elastic plate 1 with evenly distributed, round cutouts 2 as shaped holes. Butadiene polymerization products have proven to be a particularly suitable material for the manufacture of the plate. Of course, rubber or a similar elastically flexible material can also be used for the mold plate, in particular
if it is resistant to oil and grease. It is of course also possible to give the shaped holes 2 any desired plan shape, depending on the desired shape of the finished baked product.
For the production of the dough or foam molds, the mold plate 1 is placed on the baking sheet. Using a spatula or the like, the shaped holes 2 of the mold plate are spread with foam or dough mass,
whereupon the mold plate is removed from the baking sheet and the foam or dough molds. Detachment is greatly facilitated by the flexibility and elasticity of the plate.
The detachability of the mold plate can be significantly improved if the holes 2 of the plate are expanded conically downwards, as illustrated in FIG.
With a form plate, which z. B. 30 mold holes, 30 foam or dough moldings can be applied to the baking sheet in a single process.
