Appareil de brassage pour la fabrication des fromages.
Pour la fabrication de fromages, tels par exemple que le gruyère, on sait qu'après avoir fait cailler le lait dans des cuves ou chaudières et avoir coupé le lait caillé avec un tranche-caillé, on brasse les grains formés pour séparer une partie du petit lait et former la pâte qui doit être ensuite fortement pressée pour en faire sortir plus complètement le petit lait.
Les appareils de brassage actuellement utilisés comportent en général une grille rotative centrale montée sur un support que l'on pose sur la cuve où a été formé le caillé soupé en grains, une palette fixe de retenue
fant prévue sur le bord de la cuve pour empêcher une rotation sans brassage de la matière contenue dans ladite cuve.
Ces appareils de brassage présentent un grave inconvénient. Il se forme en effet contre la palette un amas de gros grains de caillé. Ces grains finissent par s'agglomérer et grossissent ainsi insensiblement pour former des boules qui arrivent à se détacher de la palette pour venir se déposer dans le talon du fromage. Ces boules, contenant davantage de petit lait, donnent lieu à une fermentation acide anormale, ce qui provoque de grosses poches d'air ou de gaz (les"cuites") que le fromager doit ensuite percer. On produit ainsi dans certaines parties du fromage de grandes cavités qui le déprécient.
En outre, la grosseur de grains n'est pas régulièrement distribuée à travers la masse du fromage, les gros grains se trouvent principalement à l'extérieur et les plus petits au centre ; dans ces conditions, la maturation du fromage ne se fait pas d'une façon uniforme dans toute la masse, de sorte que si l'arome et la finesse ont été portés au degré voulu pour certaines parties du fromage, ils n'ont pas la qualité optima pour les autres parties ; de plus, les trous n'ont pas des dimensions régulières par suite de l'irrégularité de la fermentation aux différents points.
La présente invention a pour objet un appareil de brassage qui permet d'éviter le grave inconvénient qui vient d'être signalé. lequel appareil comporte une grille de brassage principale rotative et un agitateur rotatif auxiliaire, le tout étant agencé de façon que ces organes plongent verticalement dans la chaudière lorsque l'appareil est en position, la grille occupant sensiblement le centre de la cuve et l'agitateur une position latérale par rapport à ladite grille.
Ledit appareil comporte en outre des dispositions ayant pour but d'en rendre le maniement et le contrôle plus commodes que ceux des appareils connus, permettant en par ticulier un enlèvement plus facile des organes de brassage, une fixation rapide du châssissupport et la visite des éléments de commande de la rotation.
On a donc remplacé, dans l'appareil selon l'invention, la palette fixe utilisée sur le bord de la cuve dans les appareils de brassage précédents, par un agitateur rotatif constitué, par exemple, par une grille ou un noyau comportant des pales, s'étendant avantageusement sur une largeur relativement importante de la cuve qui peut atteindre le quart du diamètre. et descendant de préférence profondément
La grille principale centrale est généralement une grille à gradins permettant un bon brassage du fond de la cuve tout en réser- vant, au-dessus, l'emplacement convenable pour la grille auxiliaire rotative précitée.
Cette grille centrale est fixée de préférence ! a l'axe qui commande sa rotation au moyen d'un crochet manoeuvrable par un simple levier permettant de libérer la grille.
On peut prévoir, en outre, deux embrayages : l'un pour l'ensemble des deux organes de brassage, l'autre pour la grille centrale seulement, de telle façon qu'on puisse continuer à faire tourner l'élément auxiliaire latéral, tout en arrêtant ou en enlevant la grille centrale.
La grille centrale peut être à deux pales, comme à l'ordinaire, lorsque l'on traite des laits alcalins. On utilise de préférence, au contraire, pour les laits acides, une grille centrale à quatre pales.
Enfin, lorsque le dispositif d'entraînement des grilles précitées est commandé par une courroie, celle-ci est avantageusement disposée dans un plan vertical parallèle au bâti de support de l'appareil de brassage (au lieu de l'être dans un plan perpendiculaire comme dans les appareils antérieurs), ce qui donne audit appareil plus de stabilité sur la cuve.
Les dessins annexés représentent une forme d'exécution de l'appareil selon l'inven- tion ainsi que des variantes de certains de ses organes, données seulement à titre d'exemple.
La. fig. 1 représente un appareil de brassage établi conformément à l'invention et monté sur une cuve ou chaudière de fabrication de fromage dessinée en pointillés.
La fig. 2 est une vue en plan correspondant à la fig. 1.
La fig. 3 montre en perspective la grille centrale utilisée dans l'appareil représenté sur la fig. 1.

Ainsi qu'on le voit sur les fig. 1 et 2, l'ap- pareil de brassage représenté est monté sur un châssis 1, qui est fixé de toute manière convenable à la cuve 2 (représentée en pointillés), par exemple au moyen de pattes 3 qui viennent se prendre sous le bord de la cuve ou chaudière et qui peuvent être serrées con tre celle-ci sur un côté par un moyen qui sera décrit plus loin. Sur l'autre côté, les pattes 4 peuvent être fixes. Au centre de ce châssis 1 est montée une grille centrale 5 qui est accrochée, au moyen d'un dispositif facile à manoeuvrer, à un axe 6 qui met en mouvement ladite grille 5. La grille 5 a de préférence, à la partie inférieure, une courbure plus forte que celle de la section méridienne de la chaudière, située immédiatement en dessous.
Les bords inférieurs 7 de la grille 5 affectent une forme de racloir pour s'opposer à la formation de dépôts de caillé dans le fond de la cuve.
La grille 5 est, comme on le voit sur les fig. 1 et 3, une grille à gradins qui couvre une grande partie du fond de la cuve ou de la chaudière, tout en laissant au-dessus d'elle une place suffisante pour loger un agitateur rotatif auxiliaire. L'agitateur représenté aux fig. 1 et 5 est constitué par un noyau 8 pourvu à sa périphérie de pales verticales comportant chacune deux faces 9 et 10 formant dièdre. Les pales se déplaçant dans le sens de la flèche, c'est la face 9 qui entraîne directement les grains de caillé. Dans ce cas, il est prévu que le plan de cette face passe sensiblement par l'axe de rotation. La face 10, au contraire, forme un certain angle avec la face 9.
Dans le cas où l'agitateur tourne en sens inverse, c'est le plan de la face 10 qui doit passer sensiblement par l'axe de rotation.
Comme on le voit sur les fig. 1 et 5, l'organe auxiliaire de brassage est plus étroit en bas qu'en haut, de façon à s'adapter à la forme légèrement tronconique de la chaudière ou cuve 2.
L'agitateur qui vient d'être décrit peut d'ailleurs être remplacé par une grille à deux ou quatre pales 11 (fig. 6) dont la forme correspond à celle de la cuve 2. Le noyau à pales ou la grille est entraîné dans un mouvement de rotation par un axe 12.
Il est à noter que la grille centrale 5, au lieu d'être à deux pales, comme on l'a représenté sur la fig. 3, peut être, à quatre pales, comme celle qui est représentée sur les fig. 2
et 4. La grille à deux pales sera utilisée prin
cipalement lorsqu'il s'agit d'un lait alcalin,
tandis que la grille à quatre pales sera uti
lisée plus spécialement lorsqu'on aura à trai
ter un lait acide.
L'organe auxiliaire rotatif remplace la
palette fixe habituellement utilisée sur le
bord de la cuve ou chaudière dans les appa
reils de brassage ordinaires. Cet organe, et
la grille centrale 5, peuvent être réglés en
hauteur le long de leurs axes respectifs 12
et 6 pour permettre d'adapter l'appareil de
brassage à la profondeur de la cuve ou
chaudière utilisée ; à cet effet (fig. 4,5 et 6),
la tige centrale des agitateurs rotatifs prin
cipaux et auxiliaires comporte un manchon
13, 14 ou 15 dans lequel peut s'introduire
respectivement l'axe 12 pour le noyau 8 ou
la grille 11 et une pièce 16 montée dans un
dispositif d'accrochage 17 solidaire de l'axe
6 pour la grille 5.
Les agitateurs sont ensuite maintenus à
la hauteur voulue, au moyen d'une vis de
serrage 18,19 ou 20.
Le dispositif d'accrochage de la grille
centrale est constitué par un manchon 21
(fig. 7 et 8), dans lequel peut venir s'enfiler
la pièce d'accrochage 16 et qui comporte une
saignée 22 dans laquelle vient s'introduire
un crochet 23 susceptible d'être manoeuvré
par un levier 24 monté à pivotement autour
de l'axe 25. Le levier 24 et le crochet 23 sont
maintenus dans la position d'accrochage re
présentée sur la fig. 7 par deux butées à res
sort 26. Lorsqu'on veut accrocher la pièce de
support 16 de la grille dans le manchon 21,
on presse vers le bas l'extrémité du levier 24,
de façon à faire passer l'étrier 27, que porte
ledit levier, au-dessus des tétons ou butées
26. La grille est alors maintenue dans la po
sition d'accrochage.
Lorsqu'on veut la décro
cher, il suffit de soulever l'extrémité du le
vier 24 pour faire passer l'étrier 27 au-des
sous des tétons 26. On voit que, grâce à une
manoeuvre extrêmement simple, il est donc possible de décrocher la grille centrale 5, ce
qui constitue un gros avantage sur les sys
tèmes antérieurs pour lesquels le décrochage était plus ou moins compliqué du fait qu'il fallait manoeuvrer des vis, ce qui n'était pas très commode, étant donné que le fromager est souvent pressé, qu'il a les mains généralement mouillées et les doigts tendres, et qu'il ne lui est alors pas très facile de maoeuvrer des vis. Avec le dispositif ci-dessus décrit, un simple coup du doigt donné sous le levier 24 suffit pour réaliser le décrochage de la grille.
L'axe 6 de la grille centrale 5 est commandé par un pignon conique 28 claveté sur lui (voir fig. 12), dont la denture 29, dirigée vers le bas, engrène sur un second pignon de commande 30 à axe horizontal. L'ensemble des deux pignons 28 et 30 est protégé par un carter 31 ou ils baignent dans l'huile. Des roulements à billes 32 et 33 soutiennent l'arbre 6 et lui permettent de tourner.
L'avantage de cette disposition est que l'action du pignon de commande 30 tend à soulever le pignon 28 qui s'oppose à son mouvement, et par conséquent à soulever l'axe 6 en déchargeant les roulements à billes 32 et 33 du poids de la grille 5.
Afin de rendre parfaitement étanche la partie inférieure du carter 31 et ne pas risquer de voir l'huile suinter et tomber dans le caillé, une rondelle 34 en matière de joint (par exemple du caoutchouc) est disposée autour de l'axe 6 et pressée dans cette position par un chapeau 35 de fermeture.
Un couvercle 36, dans lequel est prévu un logement pour le roulement à billes 32, permet l'ouverture et la visite facile du carter 31.
Une semblable disposition est réalisée pour les pignons de commande de l'axe 12 ainsi que pour leur carter 37 de protection.
Deux embrayages 38 et 39 (fig. 1) sont disposés entre les deux agitateurs rotatifs.
L'un, 38, sert d'embrayage général et l'autre, 39, permet d'embrayer ou de débrayer à volonté la grille centrale 5 pendant que l'organe auxiliaire continue à tourner.
Comme représenté à la fig. 11, le mouve- ment est transmis à partir d'une poulie à étages 40 à un axe 41, monté sur roulements à billes 42 et 43, et portant un pignon coni- que 44 qui entraîne une couronne dentée 45 située dans l'embrayage général 38 (fig. 9).
Sur l'arbre de commande 46 horizontal, un élément d'embrayage 47 (fig. 9) coulisse sur un clavetage grâce à un bouton excentrique 48 commandé par une poignée 49. L'élé- ment d'embrayage 47 est susceptible de solidariser la couronne dentée 45 et l'arbre 46.
Un dispositif 39 similaire 10) per- met l'embrayage ou le débrayage à volonté de la grille centrale 5.
L'ensemble des carters 31 et 37 et des carters d'embrayage est monté sur le bâti 1 au moyen du dispositif de support 50. Ainsi qu'on le voit dans l'exemple de réalisation donné sur les fig. 1 et 2 la poulie 40 est disposée de façon que la courroie 51 se trouve disposée parallèlement aux longerons du châssis 1. La traction que tend à exercer cette courroie ne risquera donc pas de provoquer un glissement du châssis 1 sur la cuve 2, comme ce serait le cas si elle était disposée dans un plan perpendiculaire.
On voit également que les deux agitateurs rotatifs tournent en sens inverse l'un de l'autre, puisque le dispositif de commande est placé entre les deux pignons d'entraînement des deux agitateurs en question.
Bien entendu, au lieu de la commande par poulie et courroie qui vient d'être décrite, il est possible d'envisager un moteur placé directement sur le châssis 1 de l'appareil et qui n'a pas besoin d'avoir une puissance très grande (1 cheval ou 2 par exemple).
Le châssis 1 est maintenu en place sur la cuve de façon simple au moyen de pattes 3 et 4glisséessous le bord 52. D'un coté, les pattes 4 sont fixées au châssis, de l'autre, les pattes 3 sont solidaires d'une traverse 53 cou- lissant de façon à pouvoir être appliquées contre le bord de la cuve (voir fig. 2,13,14).
La traverse 53 est repoussée dans la position de fixation, au moyen d'un excentrique pivotant autour d'un axe 55 solidaire d'une seconde traverse fixe 56.
La traverse 56 est fixée au châssis par des boulons 57 qui permettent un réglage de l'excentrique et une adaptation facile de l'appareil à des cuves de largeurs variables.
On se servira habituellement de l'appareil de brassage décrit ci-dessus, à titre d'exem- ple, de la façon suivante :
On verse tout d'abord le lait dans la cuve ou chaudière 2. On chauffe à la température convenable ; on y ajoute la présure pour faire cailler le lait. Une fois que le lait est caillé, le fromager tranche celui-ci avec un tranchecaillé, ce qui donne des grains de grosseur variable et même un peu de poussière. On place ensuite sur la cuve 2 l'appareil de brassage monté sur le châssis 1 et, après avoir assujetti ce châssis au moyen de l'excentrique 54, on met en marche le moteur, l'embrayage général 38 étant embrayé, ainsi que 1'embrayage particulier 39 de la grille centrale 5. L'appareil démarre d'abord très lentement.
Le fromager peut d'ailleurs mener à sa guise la vitesse de rotation grâce aux gradins de la poulie de commande 40, qui lui permet de diminuer ou d'augmenter la vitesse à volonté.
En raison de la forme bombée du fond de la chaudière, le caillé se trouve au milieu.
La grande grille centrale 5 tournera par exemple à droite pour remonter les grains à la surface et l'agitateur auxiliaire disposé sur le bord tournera en sens inverse (donc à gauche dans le cas présent) pour recevoir tous les gros grains de caillé qui tendent à se mettre sur les bords de la chaudière 2 et pour les ramener vers la grille centrale 5 dans la région où se trouvent les grains les plus fins et même la poussière.
Cette grille centrale, comme on l'a dit, peut être soit à deux pales, soit à quatre pales. On utilisera la grille à deux pales pour le traitement du lait alcalin qui est en généra. un lait qui na pas été brusqué et qui donne des grains tendres et faciles à se désagréger. On utilisera au contraire la grille à quatre pales qui, tout en ne tournant pas plus vite, donnera un brassage plus énergique, pour le traitement des laits acides (ce sont des laits dont le degré d'acidité a monté par suite des chocs ou de l'agitation auxquels ils ont été soumis : transport à dos d'animaux, transport par camion, etc., ou par suite de la chaleur pendant l'été). Les grains qui peuvent avoir tendance à se souder plus facilement viennent alors se heurter à l'agitateur auxiliaire latéral qui empêche cette soudure.
Au fur et à mesure des opérations, le fromager pompe le petit lait qui se forme soit avant le chauffage, soit avant l'enlève- ment du caillé pour en faciliter le brassage et la sortie. Il attend quelques minutes pour que le caillé repose bien au fond de la chaudière, puis il pompe le résidu du-petit lait.
Pendant ce temps, le caillé devient plus dur.
Lorsque le pompage est fini, le fromager remet en marche l'appareil, la grille centrale remonte facilement le grain à la surface pour envoyer les gros grains qui se trouvent toujours au bord vers l'agitateur auxiliaire qui tend à les réincorporer dans la masse centrale.
Le caillé est chauffé comme à l'ordinaire à la température voulue (par exemple 50 à 55 ). Le grain est bien nourri et cela d'une façon régulière en raison du très bon brassage que permet d'obtenir l'agitateur auxiliaire, lequel empêche la concentration de gros grains dormant contre le bord de la cuve (comme c'était le cas lorsqu'on utilisait une palette fixe).
En outre, étant donné que l'agitateur a une largeur relativement grande qui occupe, par exemple, ainsi qu'on le voit sur la fig. 2, environ le quart du diamètre de la chaudière (sans que ces proportions puissent être considérées comme limitatives en ce qui concerne la portée de l'invention), le brassage des gros grains se fait d'une façon parfaite et ceux-ci sont bien ramenés pour être mélangés aux grains plus fins de la masse centrale ; en outre, grâce à cette portée relativement grande du noyau à pale ou de la grille 11, il ne se forme pas de vagues dans la chaudière, le résidu et le caillé étant maintenus dans ladite chaudière sans brusquerie du fait en particulier que la commande a une démultiplication suffisante.
Une fois que le caillé est fait, on l'en- lève. Pour cela, l'appareil qui, en fin d'opération, marchait plus lentement, reçoit une vitesse un peu plus grande, de façon qu'il remonte le caillé plus vite. Le fromager arrête la rotation de la grille centrale 5 en agissant sur le levier 49 qui commande l'embrayage 39 (pendant ce temps, l'agitateur auxiliaire continue à tourner), il donne un léger coup du doigt sur le levier 14 d'accrochage de la grille centrale 5, ce qu'il peut faire avec la plus grande facilité, et il enlève cette grille très rapidement. L'agitateur latéral, continuant à tourner, ramène tous les gros grains au milieu de la chaudière ou cuve où ils se trouvent-mélangés avec les petits grains.
Le caillé s'arrête insensiblement de tourner, le fromager met ensuite hors d'action l'em- brayage 38, de façon à démonter l'agitateur auxiliaire et à enlever l'appareil de la chaudière pour extraire le caille et le mettre dans la presse.
Comme on l'a vu précédemment, les éléments de brassage descendent d'une façon réglable assez profondément à l'intérieur de la cuve ou chaudière 2, ce qui permet de travailler facilement avec très peu de lait.
Les grilles peuvent être faites en tout métal convenable, mais de préférence en un métal inaltérable, par exemple bronze d'alu- minium. L'appareil tel qu'il a été décrit cidessus fonctionne avec des roulements à billes, les arbres et les embrayages, les couronnes sont dissimulés dans les carters et les boîtes de commande à fermeture hermétique, ce qui empêche les saletés de tomber dans la chaudière ou cuve 2.
Le graissage se fait à l'intérieur des carters dont la vidange pouvant se faire régulièrement, par exemple deux fois par an.
Ainsi qu'on l'a dit également, l'appareil, lorsqu'il est commandé par une poulie 40, ne peut pas se déplacer sur la chaudière, étant donné la façon dont est orienté le dispositif de commande. L'appareil est enfin très léger, de sorte que le fromager peut l'enlever facilement de sur la chaudière et le ranger dans la fromagerie.
Enfin, dans certains cas, au lieu de commander le dispositif de brassage au moyen d'une courroie 51 et d'une poulie 40, on peut prévoir sur le châssis 1 un moteur électrique à faible puissance qui actionnera le système de brassage au moyen d'un dispositif de transmission qui sera. par exemple, analogue à celui qui a été décrit précédemment.
Bien entendu, le dispositif qui a été dé- crit ci-dessus et qui a été représenté sur le dessin pourrait recevoir des modifications dans ses détails de réalisation. C'est ainsi en particulier que le système d'embrayage représenté pourrait être remplacé par tout système équivalent.
Brewing device for making cheese.

These brewing devices have a serious drawback. In fact, a mass of large curd grains is formed against the blade. These grains end up agglomerating and thus insensibly grow to form balls which manage to detach from the pallet and settle in the heel of the cheese. These balls, containing more whey, give rise to an abnormal acid fermentation, which causes large pockets of air or gas (the "cooked") which the cheese maker must then pierce. Large cavities are thus produced in certain parts of the cheese which depreciate it.
In addition, the grain size is not evenly distributed throughout the mass of the cheese, the large grains are mainly found on the outside and the smallest in the center; under these conditions, the maturation of the cheese does not take place in a uniform manner throughout the mass, so that if the aroma and finesse have been brought to the desired degree for certain parts of the cheese, they do not have the optimum quality for other parts; moreover, the holes do not have regular dimensions owing to the irregularity of the fermentation at the different points.
The present invention relates to a stirring apparatus which makes it possible to avoid the serious drawback which has just been pointed out. which apparatus comprises a rotating main mixing grid and an auxiliary rotary stirrer, the whole being arranged so that these members plunge vertically into the boiler when the device is in position, the grid substantially occupying the center of the tank and the agitator a lateral position with respect to said grid.
Said apparatus further comprises provisions intended to make its handling and control more convenient than those of known devices, allowing in particular easier removal of the stirring members, rapid attachment of the chassis and the inspection of the elements. rotation control.
In the device according to the invention, therefore, the fixed pallet used on the edge of the tank in previous stirring devices has been replaced by a rotary agitator consisting, for example, of a grid or a core comprising blades, advantageously extending over a relatively large width of the tank which can reach a quarter of the diameter. and preferably deep down
The central main grid is generally a stepped grid allowing good mixing of the bottom of the tank while reserving, above, the suitable location for the aforementioned rotating auxiliary grid.
This central grid is preferably fixed! has the axis which controls its rotation by means of a hook operable by a simple lever allowing to release the grid.
It is also possible to provide two clutches: one for the assembly of the two stirring members, the other for the central grid only, so that one can continue to rotate the lateral auxiliary element, while by stopping or removing the central grille.
The central grid can be two-bladed, as usual when processing alkaline milks. On the contrary, a central grid with four blades is preferably used for acid milks.
Finally, when the drive device of the aforementioned grids is controlled by a belt, the latter is advantageously arranged in a vertical plane parallel to the support frame of the brewing apparatus (instead of being in a perpendicular plane as in previous devices), which gives said device more stability on the tank.
The accompanying drawings show an embodiment of the apparatus according to the invention as well as variants of some of its components, given only by way of example.

As seen in Figs. 1 and 2, the brewing apparatus shown is mounted on a frame 1, which is fixed in any suitable manner to the tank 2 (shown in dotted lines), for example by means of tabs 3 which come to be caught under the edge of the tank or boiler and which can be clamped against it on one side by a means which will be described later. On the other side, the legs 4 can be fixed. At the center of this frame 1 is mounted a central grid 5 which is hooked, by means of a device easy to maneuver, to an axis 6 which sets in motion said grid 5. The grid 5 has preferably, at the lower part, a curvature greater than that of the meridian section of the boiler, located immediately below.
The lower edges 7 of the grid 5 assume a scraper shape to oppose the formation of curd deposits in the bottom of the tank.
The grid 5 is, as can be seen in FIGS. 1 and 3, a stepped grid which covers a large part of the bottom of the tank or the boiler, while leaving sufficient space above it to accommodate an auxiliary rotary stirrer. The stirrer shown in FIGS. 1 and 5 is constituted by a core 8 provided at its periphery with vertical blades each comprising two faces 9 and 10 forming a dihedral. The blades moving in the direction of the arrow, it is the face 9 which directly drives the grains of curd. In this case, provision is made for the plane of this face to pass substantially through the axis of rotation. Face 10, on the contrary, forms a certain angle with face 9.
In the case where the agitator rotates in the opposite direction, it is the plane of the face 10 which must pass substantially through the axis of rotation.
As seen in Figs. 1 and 5, the auxiliary stirring member is narrower at the bottom than at the top, so as to adapt to the slightly frustoconical shape of the boiler or tank 2.
The agitator which has just been described can moreover be replaced by a grid with two or four blades 11 (FIG. 6), the shape of which corresponds to that of the tank 2. The blade core or the grid is driven in. a rotational movement by an axis 12.

The axis 6 of the central grid 5 is controlled by a bevel gear 28 keyed thereon (see FIG. 12), the teeth 29 of which, directed downwards, mesh with a second control gear 30 with a horizontal axis. The set of two pinions 28 and 30 is protected by a casing 31 where they are bathed in oil. Ball bearings 32 and 33 support the shaft 6 and allow it to rotate.
The advantage of this arrangement is that the action of the drive pinion 30 tends to lift the pinion 28 which opposes its movement, and consequently to lift the pin 6 by unloading the ball bearings 32 and 33 of the weight. grid 5.
In order to make the lower part of the casing 31 perfectly watertight and not to risk the oil seeping out and falling into the curd, a washer 34 of gasket material (for example rubber) is placed around the axis 6 and pressed. in this position by a closing cap 35.
A cover 36, in which is provided a housing for the ball bearing 32, allows the opening and easy inspection of the housing 31.
A similar arrangement is made for the drive pinions of the axis 12 as well as for their protective casing 37.
Two clutches 38 and 39 (fig. 1) are arranged between the two rotary agitators.
One, 38, serves as a general clutch and the other, 39, allows the central grid 5 to be engaged or disengaged at will while the auxiliary member continues to rotate.
As shown in fig. 11, the movement is transmitted from a stepped pulley 40 to a shaft 41, mounted on ball bearings 42 and 43, and carrying a bevel pinion 44 which drives a ring gear 45 located in the clutch general 38 (fig. 9).
On the horizontal control shaft 46, a clutch element 47 (fig. 9) slides on a keying thanks to an eccentric button 48 controlled by a handle 49. The clutch element 47 is capable of securing the clutch. ring gear 45 and shaft 46.
A similar device 39 10) allows the central grid 5 to be engaged or disengaged at will.
The set of housings 31 and 37 and of the clutch housings is mounted on the frame 1 by means of the support device 50. As can be seen in the embodiment given in FIGS. 1 and 2 the pulley 40 is arranged so that the belt 51 is disposed parallel to the side members of the frame 1. The traction that this belt tends to exert will therefore not risk causing the frame 1 to slip on the tank 2, as this would be the case if it were arranged in a perpendicular plane.
It can also be seen that the two rotary agitators rotate in the opposite direction to each other, since the control device is placed between the two drive pinions of the two agitators in question.
Of course, instead of the pulley and belt drive which has just been described, it is possible to envisage a motor placed directly on the frame 1 of the apparatus and which does not need to have a very high power. large (1 horse or 2 for example).
The frame 1 is held in place on the tank in a simple manner by means of tabs 3 and 4 slipped under the edge 52. On one side, the tabs 4 are fixed to the frame, on the other, the tabs 3 are integral with a crosspiece 53 sliding so that it can be applied against the edge of the tank (see fig. 2,13,14).
The cross member 53 is pushed back into the fixing position by means of an eccentric pivoting about an axis 55 integral with a second fixed cross member 56.
The cross member 56 is fixed to the frame by bolts 57 which allow adjustment of the eccentric and easy adaptation of the device to tanks of varying widths.
The brewing apparatus described above will usually be used, by way of example, as follows:
First of all, the milk is poured into the vat or boiler 2. It is heated to the appropriate temperature; rennet is added to curdle the milk. Once the milk is curdled, the cheese maker slices it with a sliced slicer, resulting in grains of varying size and even a little dust. The brewing apparatus mounted on the frame 1 is then placed on the tank 2 and, after having secured this frame by means of the eccentric 54, the engine is started, the general clutch 38 being engaged, as well as 1 'particular clutch 39 of the central grid 5. The appliance starts very slowly at first.
The cheese maker can, moreover, control the speed of rotation as he wishes thanks to the steps of the control pulley 40, which allows him to reduce or increase the speed at will.
Due to the rounded shape of the bottom of the boiler, the curd is in the middle.
The large central grid 5 will turn to the right for example to bring the grains to the surface and the auxiliary stirrer placed on the edge will turn in the opposite direction (therefore to the left in this case) to receive all the large grains of curd which tend to stand on the edges of the boiler 2 and bring them back to the central grid 5 in the region where the finest grains and even dust are found.
This central grid, as has been said, can be either with two blades or with four blades. We will use the grid with two blades for the treatment of the alkaline milk which is in general. a milk which has not been brusque and which gives the grains tender and easy to break up. On the contrary, we will use the grid with four blades which, while not rotating faster, will give more vigorous stirring, for the treatment of acidic milks (these are milks whose degree of acidity has increased as a result of shocks or the agitation to which they were subjected: transport on back of animals, transport by truck, etc., or as a result of the heat during the summer). The grains which may have a tendency to weld more easily then come up against the side auxiliary agitator which prevents this welding.
As the operations progress, the cheesemaker pumps the whey that forms either before heating or before removing the curd to facilitate stirring and removal. He waits a few minutes for the curd to rest well at the bottom of the boiler, then he pumps out the whey residue.
During this time, the curd becomes harder.
When the pumping is finished, the cheese maker starts the machine again, the central grid easily raises the grain to the surface to send the large grains which are still at the edge to the auxiliary agitator which tends to reincorporate them into the central mass. .
The curd is heated as usual to the desired temperature (eg 50 to 55). The grain is well fed and this on a regular basis because of the very good mixing obtained by the auxiliary agitator, which prevents the concentration of large grains lying dormant against the edge of the tank (as was the case when 'we used a fixed pallet).
Further, since the agitator has a relatively large width which occupies, for example, as seen in FIG. 2, about a quarter of the diameter of the boiler (without these proportions being able to be considered as limiting as regards the scope of the invention), the stirring of the coarse grains is done in a perfect way and they are well brought back to be mixed with the finer grains of the central mass; furthermore, thanks to this relatively large reach of the paddle core or the grate 11, no waves form in the boiler, the residue and the curd being kept in said boiler without abruptness, in particular because the control has sufficient gear.
Once the curd is done, it is removed. For this, the device which, at the end of the operation, was running more slowly, receives a slightly higher speed, so that it brings up the curd more quickly. The cheese maker stops the rotation of the central grid 5 by acting on the lever 49 which controls the clutch 39 (during this time, the auxiliary agitator continues to rotate), he gives a light stroke of the finger on the hooking lever 14 of the central grid 5, which he can do with the greatest ease, and he removes this grid very quickly. The side agitator, continuing to rotate, brings all the large grains back to the middle of the boiler or tank where they are found - mixed with the small grains.
The curd imperceptibly stops turning, the cheese maker then disables the clutch 38, so as to dismantle the auxiliary stirrer and remove the appliance from the boiler to extract the quail and put it in the boiler. hurry.
As we have seen previously, the mixing elements descend in an adjustable manner quite deeply inside the vat or boiler 2, which makes it possible to work easily with very little milk.
The grids can be made of any suitable metal, but preferably of an unalterable metal, for example aluminum bronze. The device as described above works with ball bearings, shafts and clutches, the crowns are concealed in housings and hermetically sealed control boxes, which prevents dirt from falling into the boiler or tank 2.
Lubrication is done inside the housings, which can be changed regularly, for example twice a year.
As has also been said, the apparatus, when controlled by a pulley 40, cannot move on the boiler, given the way in which the control device is oriented. Finally, the appliance is very light, so that the cheese maker can easily remove it from the boiler and store it in the cheese factory.
Finally, in some cases, instead of controlling the brewing device by means of a belt 51 and a pulley 40, a low-power electric motor can be provided on the frame 1 which will actuate the brewing system by means of 'a transmission device that will be. for example, similar to that which has been described above.
Of course, the device which has been described above and which has been shown in the drawing could be subject to modifications in its construction details. It is thus in particular that the clutch system shown could be replaced by any equivalent system.
