Abstract

L'invention concerne une nouvelle famille de gènes de .beta.-galactosidase, ainsi que les séquences d'ADN dérivées des clones d'ADN complémentaire de ces gènes. Cette invention concerne par exemple une protéine de .beta.-galactosidase II codée par un clone de l'ADN complémentaire, ci-après dénommé pZBG2-1-4. L'invention concerne également un procédé permettant de modifier le métabolisme pariétal, ce procédé consistant à modifier l'activité d'au moins une .beta.-galactosidase, et donc à modifier la qualité du fruit. La présente invention concerne par ailleurs un produit de recombinaison d'ADN comprenant la totalité ou une partie de la séquence d'ADN d'une .beta.-galactosidase, sous le contrôle d'une région d'initiation transcriptionnelle végétale, de sorte que ledit produit de recombinaison peut produire un ARN, et éventuellement un polypeptide de .beta.-galactosidase, dans des cellules végétales. La présente invention concerne en outre des vecteurs recombinants comprenant les molécules d'acide nucléique isolé de cette invention, ainsi que des cellules hôtes contenant ces vecteurs recombinants. Cette invention concerne également des procédés de fabrication de ces vecteurs et de ces cellules hôtes, ainsi que leur procédé d'utilisation permettant de produire des polypeptides ou des peptides de .beta.-galactosidase par des techniques de recombinaison. La présente invention concerne enfin: des cellules végétales contenant les produits de recombinaison d'ADN susmentionnés; des végétaux dérivés de ces cellules et présentant une expression génique de .beta.-galactosidase modifiée; et des graines produites à partir de ces végétaux.
