Abstract

Les matières premières telles que les sirops de glucose et les mélasses de canne ou de betterave qui sont utilisées dans les processus de production comportant une fermentation contiennent habituellement des saccharides que ne peuvent pas utiliser les microorganismes employés dans ces processus. La présente invention porte sur l'emploi de préparations d'enzymes capable d'hydrolyser les saccharides non fermentescibles, les transformant en saccharides fermentescibles, afin d'améliorer le rendement du processus de production comportant une fermentation. Ces préparations d'enzymes peuvent être mises en oeuvre en un point du processus où le taux total d'hydrates de carbone est inférieur à 20 % afin d'éviter les réactions inverse. Les préparations d'enzymes sont mises en oeuvres de préférence sous une forme immobilisée.
