ABSTRACT
A crabapple confection, and its method of preparation are disclosed. The crabapples are sliced, dried and enrobed in a cooked mixture of sweetener, milk, butter, carob and coconut, then rolled with coconut. The resultant product is allowed to cool and set before serving.

CRABAPPLE CONFECTION
This invention relates to the field of food and its preparation, more particularly to a method for the preparation of candied crabapples and candied crabapples produced thereby.
Food products are commonly used in the preparation of candies. Candied apples are well known and there are many examples of fruit or nuts used in combination with chocolates or other candy material to form sweet tasting products. It is an object of the present invention to provide a novel crabapple confection and a method for its preparation.
According to one aspect of the present invention there is provided a crabapple confection comprising dried crabapple pieces, enrobed in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut~meat and particulate coconut meat embedded in the surface of the enrobed crabapple pieces.
According to another aspect of the present invention there is provided a method for the preparation of the crabapple confection comprising: preparing dried crabapple pleces; enrobing the crabapple pieces in a cooked mixture of sweetener, milk, a material selected from the group ~ consisting of edible fats and oils, a material selected from :~

CRABAPPLE CONFECTION
This invention relates to the field of food and its preparation, more particularly to a method for the preparation of candied crabapples and candied crabapples produced thereby.
Food products are commonly used in the preparation of candies. Candied apples are well known and there are many examples of fruit or nuts used in combination with chocolates or other candy material to form sweet tasting products. It is an object of the present invention to provide a novel crabapple confection and a method for its preparation.
According to one aspect of the present invention there is provided a crabapple confection comprising dried crabapple pieces, enrobed in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut~meat and particulate coconut meat embedded in the surface of the enrobed crabapple pieces.
According to another aspect of the present invention there is provided a method for the preparation of the crabapple confection comprising: preparing dried crabapple pleces; enrobing the crabapple pieces in a cooked mixture of sweetener, milk, a material selected from the group ~ consisting of edible fats and oils, a material selected from :~

The invention will be described in the following by way of example, in terms of the currently preferred embodiment of the invention.
The crabapple candies are prepared as follows;
crabapples are washed, then cut into halves or quarters. The seeds, if any, are removed. The prepared fruit is then dried.
A coating for the crabapples is prepared by mixing together one cup of powdered carob, three tablespoons of honey, one cup of blackstrap molasses, one half cup of milk, two tablespoons of butter and ground coconut. The ingredients are mixed and brought to a boil over a low heat while continuously stirring the mixture. Once the mixture has been heated to a soft ball state (234F; 112C) two tablespoons of butter and one teaspoon of vanilla are added.
The mixture is allowed to cool slightly.
The crabapple pieces are individually dipped into the mixture to coat them completely. The excess liquid is allowed to drip off of the crabapple. While still warm, and while the ~ixture is still in a liquid state on the surface .

The resulting confection is a dried section of the crabapple enrobed in a coatiny of carob, honey, molasses, milk, butter and coconut meat, with additional particulate 5 coconut embeddad in the surface.
While one embodiment of the invention has been described in the foregoing it is to be understood that other embodiments are feasible within the scope of the invention.
Thus, cacao or chocolate may be substituted for the carob while the proportions of honey and molasses may be varied or replaced with other sweeteners. sutter may be replaced with other oils or fats where this is desired. It i9 considered of importance to the character of the product, however, that the fruit be dried crabapple.

The invention will be described in the following by way of example, in terms of the currently preferred embodiment of the invention.
The crabapple candies are prepared as follows;

Claims
The embodiments of the invention of which an exclusive right or priviledge is claimed are defined as follows;
(1) A method for the preparation of a crabapple confection comprising; preparing dried crabapple pieces;
enrobing the crabapple pieces in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao or chocolate, and particulate coconut meat; and embedding particulate coconut meat in the surface of the enrobed crabapple pieces.
(2) A method according to claim 1 comprising the preliminary steps of preparing the crabapple pieces by cutting, seeding and drying crabapples.
(3) A method according to claim 1 comprising mixing the sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut meat, heating the mixture to a boil and continuing to heat the mixture to a soft ball state.
(4) A method for the preparation of a crabapple candy comprising: cutting, seeding and drying crabapples;
preparing a coating mixture by mixing together, in the following proportions, one cup of powdered carob, three tablespoons of honey, one cup of blackstrap molasses, one half cup of milk, two tablespoons of butter and particulate coconut meat, heating the mixture to a soft-ball state, adding, in proportion, two tablespoons of butter and one teaspoon of vanilla, cooling the resultant coating mixture, dipping the crabapple pieces into the coating mixture to enrobe them completely in the coating mixture, allowing excess coating mixture to drip off the crabapple pieces, rolling the pieces in particulate coconut meat and allowing the coating to set.
(5) A crabapple confection comprising dried crabapple pieces enrobed in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut meat and having particulate coconut meat embedded in the surface of the enrobed crabapple pieces.
(6) A crabapple confection according to claim 5 in which the sweetener comprises a material selected from the group consisting of blackstrap molasses, molasses and honey.
(7) A crabapple confection according to claim 5 in which the edible fats comprise a material selected from the group consisting of butter, oil and fat.

enrobing the crabapple pieces in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao or chocolate, and particulate coconut meat; and embedding particulate coconut meat in the surface of the enrobed crabapple pieces.
(2) A method according to claim 1 comprising the preliminary steps of preparing the crabapple pieces by cutting, seeding and drying crabapples.
(3) A method according to claim 1 comprising mixing the sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut meat, heating the mixture to a boil and continuing to heat the mixture to a soft ball state.
(4) A method for the preparation of a crabapple candy comprising: cutting, seeding and drying crabapples;
preparing a coating mixture by mixing together, in the following proportions, one cup of powdered carob, three tablespoons of honey, one cup of blackstrap molasses, one half cup of milk, two tablespoons of butter and particulate coconut meat, heating the mixture to a soft-ball state, adding, in proportion, two tablespoons of butter and one teaspoon of vanilla, cooling the resultant coating mixture, dipping the crabapple pieces into the coating mixture to enrobe them completely in the coating mixture, allowing excess coating mixture to drip off the crabapple pieces, rolling the pieces in particulate coconut meat and allowing the coating to set.
(5) A crabapple confection comprising dried crabapple pieces enrobed in a cooked mixture of sweetener, milk, a material selected from the group consisting of edible fats and oils, a material selected from the group consisting of carob, cacao and chocolate, and particulate coconut meat and having particulate coconut meat embedded in the surface of the enrobed crabapple pieces.
(6) A crabapple confection according to claim 5 in which the sweetener comprises a material selected from the group consisting of blackstrap molasses, molasses and honey.
(7) A crabapple confection according to claim 5 in which the edible fats comprise a material selected from the group consisting of butter, oil and fat.
