Abstract

"REDUçãO DO ACASTANHAMENTO NãO ENZIMáTICO EM SUCO CìTRICO DE CASCA". A presente invenção se refere a um método para preparo do suco cítrico concentrado de casca para reduzir o acastanhamento não enzimático. Mais especificamente, a invenção se refere à adição de L-cisteína ao suco de casca antes da evaporação e/ ou pasteurização durante o processamento a fim de remover os amargos e desse modo retardar o agregado de componentes polifenólicos. Retardando-se o acúmulo de polifenólicos, a invenção inibe o acastanhamento do suco de casca.
