Abstract
"EMULSãO DE ALIMENTO COM BAIXO TEOR DE GORDURA, PROCESSO PARA PREPARá-LA, E, PRODUTO DE ALIMENTO CONTENDO A MESMA". Emulsões com baixo teor de gordura são compostas de uma fase aquosa contínua e uma fase dispersada composta de partículas de gordura, partículas de gel e moléculas de sabor solúveis em gordura; substancialmente todas as partículas de gordura são localizadas nas partículas de gel, e pelo menos 35% em peso das moléculas de sabor são localizadas em uma pluralidade das partículas de gel. A taxa de liberação das moléculas de sabor da emulsão é retardada e controlada em seguida ao rompimento gradual das partículas, dessa maneira fornecendo o gosto e a sensação bucal de uma emulsão cheia de gordura.
