Abstract
"PROCESSO PARA PRODUZIR UM CONFEITO GELADO,CONFEITO GELADO, CONFEITO DE SORVETE CREMOSOENVOLVIDO, E, CONFEITO GELADO DENTRO DE UMENVOLTóRIO NãO ADERENTE". Um confeito geladocompreendendo uma massa de leite que contém um confeitogelado e um elemento discreto de sorvete cremoso, em que osorvete cremoso é essencialmente não viscoso e tem umacomposição que, na forma de solução de sorvete cremoso, tem umvalor de reometria de mais que cerca de 1,0. O confeito geladofornecido tem um elemento de sorvete cremoso mole. O confeitogelado é fornecido por um processo em que (i) uma massa de leitecontendo um confeito gelado é contactada com uma solução desorvete cremoso que tem um valor de reometria de mais que cercade 1,0, para fazer com que a solução de sorvete cremoso venha aaderir a massa de leite que contém o confeito gelado, pelo menosem parte na forma de sorvete cremoso; e (ii) a solução de sorvetecremoso aderente é rapidamente resfriada a - 15<198>C ou menos."PROCESS TO PRODUCE AN ICE CREAM, ICE CREAM, CREAMY CREAM CREATED ICE CREAM, AND ICE CREAM WITHIN A NON-STICKEN ENVIRONMENT." A frozen confectionery comprising a mass of milk containing a frozen confectionery and a discrete element of creamy ice cream, in which the creamy ice cream is essentially non-viscous and has a composition that, in the form of a creamy ice cream solution, has a rheometry value of more than about 1 , 0. The frozen confectionery has an element of soft creamy ice cream. The iced confection is provided by a process in which (i) a milk mass containing an iced confection is contacted with a creamy ice cream solution that has a rheometry value of more than about 1.0, to make the creamy ice cream solution come adhering to the mass of milk containing the frozen confectionery, at least in part in the form of creamy ice cream; and (ii) the sticky cream sorbet solution is rapidly cooled to - 15 <198> C or less.
