In a first phase, the relative humidity of the drying air is allowed to rise to between 50% and 55%, and is kept substantially constant at that value during the second phase, keeping the exchange of the drying air with fresh air substantially constant. In a third stage of the process the relative humidity of the drying medium is allowed to decrease relatively quickly until the fourth stage begins, at which stage the relative humidity is allowed to approach asymptotically a predetermined value of relative humidity. During the drying process, differences in temperature and excessive relative humidity differences between the temperature and relative humidity, respectively of the drying medium and the product, are prevented in order to minimize damage to the cellular structure of the product.
