COMPOSIÇÃO DE PIGMENTO PARA UM SUBSTITUTO DE CARNE, COMPOSIÇÃO SUBSTITUTA DE CARNE, E, SUBSTITUTO DE CARNE. São apresentadas na presente invenção composições de pigmento para substitutos de carne e substitutos de carne incluindo tais composições de pigmento. As composições de pigmento incluem Ficoeritrina. Em um aspecto, as composições de pigmento incluem algas vermelhas ou um extrato de algas vermelhas. Em um aspecto, as composições de pigmento fornecem uma cor rosa e/ou vermelha aos substitutos de carne crua que passam para uma cor marrom ou incolor após o cozimento.
