Abstract

COMPOSIÇÃO DE GORDURA, MISTURA DE GORDURA DE LEITE HUMANO SUBSTITUTA, FÓRMULA INFANTIL, USO DA COMPOSIÇÃO DE GORDURA E DA MISTURA DE GORDURA DE LEITE HUMANO, E, PROCESSOS PARA PREPARAR UMA COMPOSIÇÃO DE GORDURA, UMA MISTURA DE GORDURA DE LEITE HUMANO SUBSTITUTA E UMA FÓRMULA INFANTIL. A invenção fornece uma composição de gordura compreendendo de 20% a 50% em peso de ácido palmítico (C16:0), de 20% a 45% em peso de ácido oleico (C18:1) e de 17% a 40% em peso de ácido linoleico (C18:2), as referidas porcentagens de ácido sendo baseadas no peso total de ácidos graxos C8 a C24; em que a composição de gordura tem uma razão em peso de ácido oleico (C18:1) para ácido linoleico (C18:2) de 0,4 a 2,4; em que a porcentagem de ácido palmítico na segunda posição de triglicerídeo (SN-2 de C16:0) é de pelo menos 40% com base na quantidade total de ácido palmítico; e em que a composição de gordura compreende no máximo 5,0% em peso de triglicerídeos PPP e tem uma razão em peso de triglicerídeos OPL para triglicerídeos OPO de 0,80 a 1,60 com base nos glicerídeos totais presentes na composição de gordura, em que O é ácido oleico, P é ácido palmítico e L é ácido linoleico.
