Abstract

a presente invenção refere-se a um processo para aquecimento rápido e homogêneo de um produto líquido a uma temperatura predeterminada por meio de aquecimento resistivo. de acordo com a invenção, a inativação microbiana suficiente e eficaz é alcançada aplicando uma intensidade de campo elétrico entre 0,1 - 5,0 kv/cm durante um período de tempo prolongado, selecionando, assim, uma intensidade de campo elétrico relativamente baixa e uma duração de pulso de pelo menos 10 microssegundos, enquanto a temperatura máxima do produto líquido permanece autonomamente abaixo de 92°c durante o aquecimento resistivo. o processo da invenção é eficiente a um ph neutro e a um ph inferior a 7. além disso, o processo da invenção é eficiente na inativação de um vasto conjunto de micro-organismos relevantes. a presente invenção refere-se adicionalmente ao referido processo em que o produto líquido é pré-aquecido antes de submeter o produto líquido ao processo. a presente invenção também se refere ao produto líquido obtenível pelo processo de acordo com a invenção.
