Abstract
é divulgado aqui um processo para a produção de um produto de café instantâneo em um alto rendimento, compreendendo as etapas de extração de grãos de café torrados e moídos com água tendo uma temperatura de 80°c ou menos, para produzir um primeiro extrato e grãos de café gastos, adicionar água para os grãos de café gastos para produzir uma suspensão aquosa, hidrolisar a suspensão aquosa usando uma enzima de hidrólise para produzir um segundo extrato e restos gastos, adicionando o primeiro extrato para o segundo extrato, opcionalmente após a concentração e/ou secagem do segundo extrato, para obter um extrato combinado, e secar o extrato combinado para obter um produto de café instantâneo. o alto rendimento é obtido devido à redução de substâncias de inibição de enzima.
