Abstract

método antimicrobiano para processos de fermentação. a presente invenção diz respeito a um sistema e a um método para controle de bactérias, especialmente bactérias de ácidos láctico e acético na produção de etanol usando um composto oxidante orgânico em combinação com um oxidante inorgânico. particularmente, uma mistura de um ou mais peróxi ácidos e um ou mais compostos de peróxido é introduzido em uma massa de fermentação de modo a inibir ou reduzir os níveis de bactérias que competem com a levedura pelos açúcares da fermentação. o peróxi ácido e os compostos de peróxido são em grande parte consumidos durante o processo de fermentação, especialmente nos grãos recuperados do destilador.
