Description
The present invention patent has as its object a process for extracting and purifying almond material from mango seeds, with the purpose of enabling industrial use and adding value to this residue arising from the processing of mango pulp, which can be used to produce starch, flour or extract oil or bioactive compounds. Therefore, the process, object of the present invention patent, applies to the food and cosmetic products industries.
Brazil is the seventh largest mango producer in the world, with India and China being the largest producers [1]. According to IBGE [2], Brazil produced 1,569,000 tons of mangoes in 2020, with emphasis on the states of Pernambuco, Bahia, São Paulo and Minas Gerais, which are responsible for 89% of national production.
In Brazil, mangoes ripen in greater quantities from November to March [3]. A part of this production is destined for the fresh market, but another significant part of this production is destined for industrial processing, enabling a greater market option for large production concentrated in the summer months. However, technologies that help with floral induction, such as the application of hormones, have allowed fruit production at other times [4].
Mango processing is used to prepare slices, pieces or rings in syrup, nectar, pulp, sweet in mass or mango, simple and concentrated and frozen juice, jellies, frozen or refrigerated slices or pieces, candied slices, mango cereal bar , wine and vinegar and even lesser-known products, such as green or immature mango products, known in India as “amchur” or “amchoor” and “chutney” [5].
In the industrial processing of mango pulp, peels and pits are normally discarded, causing daily accumulation of waste in industries and generating a large environmental liability. Several studies have shown the potential for using these residues and proven the viability of their use due to their chemical and nutritional composition. However, a processing technology is needed that provides industries with separation and purification of the components of these wastes, on a large production scale, to add value to their co-products.
Research has shown that mango seed waste is a source of raw material for other products of commercial interest. Some studies report the use of almond starch as a thickener in dairy drinks [6], the manufacture of biscuits enriched with mango seed flour [7], the preparation of cereal bars using mango seeds [8].
The production yield of pulp and peel and pit waste is influenced by the mango variety. According to Huber et al. [9], the Ubá mango has 57% pulp, 23% peel, 15% seeds and 5% almonds. Hiluey et al. [10] found that the Espada mango has 56.9% pulp, 20.6% peel, and 21.5% seeds. According to Solís-Fuentes and Duran-de-Bazua [11], the Manila variety has 66.5% pulp, 16.1% skins, 11.7% seeds and 5.6% almonds. According to Wurlitzer et al. [12], the Tommy Atkins variety has 75.5% pulp, 11.7% peel and 10% seeds, and the Palmer variety has 77.5% pulp, 8.1% peel and 9.3% % of pits. Silva et al. [13] found a pulp yield of 61.2% for Ubá mango, 75.0% for Tommy Atkins mango and 80.6% for Palmer mango, also obtaining 15.6% of seed for Ubá mango, 10.6% for the Tommy Atkins variety and 8.9% for the Palmer variety. In the evaluation of 67 accessions of Ubá mango genetic materials of industrial interest, Rufini et al. [14] noted a large variability in the weight of fruits (91.5 g to 182.25 g) and seeds (8.25 g to 21.0 g).
The mango seed is formed by the tegument (shell) that covers the almond. The seed shell is largely made up of cellulose and hemicellulose fibers and lignin. Almonds are rich in proteins, lipids, starch, soluble and insoluble fibers, minerals and bioactive compounds [15] [16] [17] [18] [19], and can be used as an ingredient in food formulations or serve as raw material for extraction of its carbohydrates and lipids [20].
In the state of the art, there are solutions for extracting almonds from mango seeds, but they involve processes different from those proposed in the present invention patent. The solutions contained in the state of the art will be presented in the following paragraphs.
The utility model patent CN208133068U consists of a mechanical peeler that has devices for cutting the edge of the kernel shell, enabling the displacement of the shell and facilitating the removal of the kernel [21].
The utility model patent CN209030541 deals with a mechanical device applied to peel mango seeds of different sizes, removing the skin by clamps after cutting the seed, and releasing the kernel [22].
The invention patent IN1778CHE2012 consists of equipment in which the seeds are processed in a device that has a toothed cylinder operating inside a chamber, under high rotation to remove the shells from the seeds at the side exits of the chamber and the almonds at the bottom of the chamber [ 23].
In the invention patent IN202121003041, for the process of extracting oil from mango kernels [24], the processing of the seeds is done after total drying at 65°C for 16 h in a tray dryer until reaching a moisture content of 6% dry base. Subsequently, the seeds are broken manually by blows, and mechanical breakers can also be used, making it possible to separate the shell and the almond by rubbing the almonds.
In the article “Chemical characterization of mango agro-industrial processing residue” [15], the almond material was obtained after completely drying the kernel at 60°C for 72 hours, with crushing in a disintegrator and separation on a 3 mm sieve. to obtain almond bran.
However, the solutions present in the prior art are distinct from the technological process, object of the present invention patent, which still has the advantage of being able to operate with large volumes of stone waste within a shorter processing time in the industry.
The present invention patent proposes a process for extracting and purifying almond material from mango seeds. The process involves a sequence of steps that consist of: separating the peels and seeds; cleaning the pits to remove pulp residue; partial drying of the kernel; crushing the kernel to release the kernel material; and, finally, the mechanical separation of the almond fragments between the fibers of the seed coat.
In the industrial mango pulp processing line, the fruits pass through a pulper that separates the pulp and discards the seeds along with the peels. For this reason, the first stage of the process, object of the present invention patent, consists of separating the mango peels and seeds in a Separation Tank, where the seeds remain in suspension and are dragged by the water flow in the pipe positioned in the upper part. from the tank and are discharged onto a mesh belt that allows only the lumps to be collected and the water to be drained into a suspension water recycling reservoir. The shells tend to settle at the bottom of the tank and are removed through a pipe with valve mechanisms and flushing devices.
After separating the mango peels, the pits are washed by manual brushing with water to remove pulp residues that remain adhered to the skin.
Alternatively, mechanical washers can be used, where the seeds are carried on a conveyor belt and washed with water between rotating cylinders with brushes, or using devices with water jets on a seed conveyor belt, or in water tanks with an agitation system. mechanics. However, the different hygiene methodologies listed above are mere modifications or adaptations that can be applied to the process claimed in this patent, obvious to a technician in the field and, therefore, should not be considered beyond the scope of this invention.
Once the washing water has been drained, the kernels go through a partial drying stage to reduce the moisture in the shell, but avoiding excessive reduction in the almond's moisture. Drying time and temperature conditions must be controlled to promote drying of the kernel shell and maintain or minimally change the almond's moisture. This drying control helps the shell material become lighter and facilitates removal by ventilation mechanisms; Meanwhile, the almond material does not become so brittle during the next step of crushing the kernel, making it difficult to separate and purify the almond material, which when very dehydrated tends to be dragged by the air flow along with the shell material. Therefore, the partial drying of the seeds, proposed by the process, object of the present invention patent, must be carried out, preferably, at temperatures between 50oC and 70°C, not being restricted to this temperature range, depending on the moisture content. seed and mango variety used, carried out in a tray dryer with forced ventilation, air speed in the range of 1 to 3 m/s, for 1 to 3 hours, to reduce peel humidity below 20% and maintain almond moisture above 33%, which makes it possible to obtain pure almond material and with a higher separation yield of almond material.
Alternatively, partial drying can be carried out on screens in ambient air, or using mechanical dryers of different types, such as continuous dryers with concurrent or countercurrent hot air flow, rotary drum dryers with heated air circulation, etc. However, the different drying methodologies listed above are mere modifications or adaptations that can be applied to the process claimed in this patent, obvious to a technician in the field and, therefore, should not be considered beyond the scope of this invention.
The drying time and temperature conditions must be adjusted to achieve a reduction in moisture in the shell and to avoid excessive reduction in moisture in the almond. Using temperatures above 70°C accelerates drying time, but may affect the quality characteristics of the almond material.
After the partial drying process, the kernels are crushed to break the shell of the kernel and release the almond material. This grinding is done in a knife and hammer mill, using sieves with a 1.5 cm mesh in the processing chamber, but the sieve mesh can be adapted according to the size of the seed, to allow the passage of larger particles of shells and almonds. . Fine sieves interfere with the process of separating and purifying the almond material. Alternatively, a knife mill can be used, but such a modification to the process should not be considered beyond the scope of this invention, as it would be obvious to a person skilled in the art.
Finally, the crushed kernel material is sieved in vibrating sieves adapted with a controlled ventilation system in the range of 1 to 3 m/s to promote the dragging of the fibrous material from the shells and preserve the almond material on the sieves, which is discharged into a reservoir for collecting the almond material.
Alternatively, the separation and purification of almond material can be adapted to employ other types of mechanical devices with airflow, such as, for example, airflow separation in cyclone-type equipment adapted with controlled airflow, which drags the lighter material from the shell particles and collects the almond material at the bottom of the equipment. However, the different alternative ventilation separation methodologies are mere modifications or adaptations that can be applied to the process claimed in this patent, obvious to a person skilled in the art and, therefore, should not be considered beyond the scope of this invention.
The shells of the pits removed by the air flow are collected in a shell material reservoir, and can be used as a fiber supplement for animals, or other applications in the agricultural sector or various interests.
The pure almond material can then be used by industry for the purpose of extracting its components, or it can be dried again under low temperature conditions (below 70oC) to avoid changes in the quality of the material, until it reaches the level of humidity less than 10%, which is suitable for conservation. This almond material with moisture content less than 10% is recommended to be processed in a hammer mill to obtain almond flour.
