A presente invenção refere-se a um processo melhorado para a produção de sucos de fruta clarificados livres de sedimento e o uso principal da invenção será no processamento enzimático rápido de polpa de fruta de banana, lichi e goiaba em um suco completamente clarificado, que é livre de qualquer sedimentação após engarrafamento.
