Abstract

"USO DE INULINA EM PRODUTOS DE CARNE ISENTOS DEADJUVANTE DE FOSFATO E, PRODUTO DE CARNE ISENTODE ADJUVANTE DE FOSFATO". A invenção refere-se ao uso deinulina como um substituto para auxiliares convencionais,particularmente adjuvantes fosfato, em produtos de carne quecontém 10-95% (m/m) de carne, 3-60% (m/m) água, e 0,5 -35%(m/m) de outros componentes, em uma quantidade de 0,5-8%(m/m), com base no peso total do produto de carne.Particularmente, um produto de carne de tipo inferior que contém10-40% (m/m) carne, 30-60% (m/m) água e 2-7% (m/m) de inulina eproduto de carne de ave doméstica que contém 70-95% (m/m)carne, 3-25% (m/m) água e 2-7% (m/m) inulina são descritos.
