Abstract

The use of any ionophoretic polyether antibiotic in industrial alcoholic fermentation media is described. 0.5-1.5 p.p.m. of such antibiotics prevent bacterial growth and enhance the productivity of alcoholic fermentation using yeast.

Description

Use of iontophoretic antibiotics to control bacterial development in industrial alcoholic fermentation

The present invention relates to the use of any of the polyether ionophore antibiotics to limit bacterial development in the following medium for industrial alcoholic fermentation: sugar beet or cane juice, sugar beet or cane molasses, cereal hydrolyzates, or of underground stems, products made from grape wine or apple wine.

The current state of the plants, the microbial of 10 microbes / ml, is increasing with the present flora. up to 10θ germs / ml. during the 10 ^ of the alcoholic fermentation process. At this concentration, germs / ml. there are organic acids that interfere with the development and alcoholic fermentation of yeast.

This bacterial lactic acid flora can also convert glycerol to acrolein in an environment originating from wine or apple wine. Acrolein is a carcinogenic substance that further finds its way into distilled alcohol for human consumption.

е.The present invention consists in introducing into the fermentation medium (initially containing sugar must) a concentration close to 0.5 parts per million polyether ionophore antibiotic which exhibits bacteriostatic action therein, i.

При дози на антибиотика над 0.5 части на милион,същият има бактериално действие и поради това става възможно да снижи бактериалното съдържание.-2 This prevents bacteria from developing but does not affect the yeast to a concentration of 100 parts per million. This bacterial flora maintained at 10 ^ / ml. does not produce any organic acid and hence is not able to lower the alcoholic fermentation. Under these conditions, it can not produce any amount of acrolein. At doses of antibiotic above 0.5 parts per million, it has a bacterial action and therefore becomes possible to reduce bacterial content.

The addition of a polyether ionophore antibiotic to the fermentation medium makes it possible to improve the continuous operation of the alcoholic fermentation plants, as well as to improve the quality of the chemical composition of the distilled alcohol.
