Abstract
Методът намира приложение в хранително-вкусовата промишленост. Получената по него глутаминова киселина е в кристално състояние, за предпочитане под формата на натриева сол, и е с отлична чистота. Методът се състои в ултрафилтруване и последващо подкиселяване на ферментационната мъст, съдържаща глутаминова киселина. Наличните вещества могат да се рекуперират, когато след ултрафилтруването преминалата фракция се концентрира до получаване на концентриран сок от глутаминова киселина и кондензат.
