De nombreux essais ont montré que les températures plus élevées appliquées suivant l'invention présentent des avantages en ce qui concerne la saveur de la bière préparée à partir du coût en poudre.Lors du séchage, il se forme apparemment des produits de torréfaction analogues à ceux formés lors du touraillage du malt utilisé pour les bières classiques, de sorte que les bières préparées avec le produit de digestion séché suivant l'invention ont une saveur excellente et ne présentent pas l'arrière-goût habituel de grain cru des bières préparées avec du grain cru. Les intervalles de température mentionnés ci-dessus pour le procédé de séchage permettent une coloration à volonté du produit de diges� tion dans les limites propres aux divers types de bières.
Ainsi, aux températures inférieures des intervalles, on obtient des poudres de coûts d'orge qui forment, après redissolution dans l'eau des coûts très clairs dont les indices de coloration sont ceux habituels pour les bières de type Pilseno Aux températures de séchage supérieures, on peut préparer des poudres plus fortement colorées, comme celles nécessaires pour des bières du type Vienne ou Munich
