Abstract
Dessert powder contains, per 100 pts. wt., 45-65 pts. wt. sweetening agent, 30-50 pts. wt. milk powder, 1-2 pts. wt. cold soluble binder and 1.5-2.5 pts. wt. coagulating salt. It is simple and economical to produce, and can be converted into a range of desserts, such as pudding, foam or whipped topping, cream, mousse, aerated ice cream mix. or aerated milk-shake.
