PROCEDE DE TRAITEMENT DE.FROMAGE DE HOLLANDE EN MORCEAU.

On sait que lors du chauffage de fromage ordinaire il se pro- duit un changement de structure dans ce sens que la graisse se sépare-de avec la caséineo Ensuite on sait qu'on peut ralentir le mûrissage du fro- mage de Cheddar américain et du Camenbert français en empaquetant les mor- ceaux de fromage dans une enveloppe collantes constituée par de la cello- phane avec une couche de caoutchouc et de cires et en pasteurisant après pendant quelques minutes les morceaux, par chauffage diélectrique à des températures comprises entre 47 C et 68 C (Journal of Dairy Science 31, 1948, pages 710/11 et 32, 1949., pages 790/5). Alors le jeune Cheddar ne subit presque pas de changement de structure ; vieux Cheddars par con- tre, subit des changements.
Avec le Camenbert non plus on n'obtenait de résultats satisfaisants, parce que le fromage changeait de couleur.
La demanderesse a trouvé maintenant qu'on peut pasteuriser avec succès du fromage de Hollandes comme le fromage de Gouda ou d'Edam. en le portant par chauffage diélectrique à la température de pasteurisa- tion et en le maintenant à cette température pendant au moins 15 minutes, par exemple dans un thermostat.
Le changement de structure auquel on s'attend ne se produit pasquand on utilise des températures comprises entre 70 et 90 C et qu'on maintient cette température pendant 15 à 45 minutes. Il apparaît également que le vieux fromage maintient sa structure et sa saveur aussi bien ou mieux encore que le jeune fromage.
Selon le procédés objet de la présente inventions on met le fromage en forme de blocs et on empaquette ces blocs dans une ou plusieurs pellicules d'une matière imperméable aux micro-organismes comme par exem- ple le pliofilm ou la cellophane. On ferme l'emballage hermétiquement en le soudant et en éliminant de préférence par évacuations l'air qui se trouve encore entre le fromage et l'emballage. Par cela on obtient que lors du

chauffage la pellicule reste collée contre le fromage. Puis on place les morceaux de fromage empaquetés dans des boîtes des mêmes dimensions que les morceaux faites en une matière à faibles pertes diélectriques, com- me le polyéthylène ou le polystyrène., et on dispose ces boites entre'les électrodes d9un générateur de haute fréquence.
Avec une série d9essais on employait un générateur de 1 kw-40 Mc/S, avec une autre série d'essais un générateur de 2.5 kw-35Mc/S.La distance entre les électrodes était de 7.85 cm, l'épaisseur des morceaux de fromage de 4.5 cm. Selon l'espèce de fro- mage maintenant les morceaux 6 à 12 minutes savoir jusqu9à ce qu'ils ai- ent atteint une température comprise entre 70 et 90 Co Ensuite on place les morceaux de fromage dans un thermostat et on les maintient pendant 15 à 45 minutes à la température susindiquée; ensuite on les refroidit,, par exemple dans de l'eau froide.
On a constaté qu'on peut imprimer la matière d'emballage, sans que cela gêne.le chauffage à l'aide de hautes fréquences.
Le fromage ainsi traité se trouve n'être presque pas changé en ce qui concerne sa saveur et sa structure tandis que., il se conserve beaucoup mieux. L'examen bactériologique a montré que les bactéries d' acide lactique les moisissures les ferments et les bactéries du groupe Coli Aérogenès sont pratiquement disparus.
