On connait déjà des appareils chauffés par l'électri- cité basés sur le principe de la circulation continue,, et servant à la préparation rapide du café. Dans ces appareil l'eau est chauffée par des électrodes ou des résistances.
Lors de l'application pratique,, on constatait qu'un fonc- tionnement sure et irréprochable ne pouvait pas être obter avec 1 !aide des moyens proposés. Le chauffage par électro( n'est applicable qu'avec du courant alternatif. L'effet calorique dépend de la conductibilité de l'eau.
L'eau chauffée par le courant subit en outre un changemeni d'état défavorable. Le fait de devoir isoler ce genre d' appareils de manière que tous les organes sous tension soient t à l'abri de contacts extérieurs et que les flux de courant ne puissent se produire par l'eau qui s'écoule, présente en outre des difficul tés presque insurmontables.
Or, ces défauts du chauffage par électrodes n'existent pas

dans les réchauds à circulation continue avec conducteur de chauffage isolé. Les appareils de ce genre, connus et préconisés jusqu'à ce jour, ne permettent cependant pas un débit de vaoeyr et d'eau chaude irréprochable et sur.
On sait qu'afin d'obtenir une extraction rapide, à rende- ment élevé, n'influenpant aucunement le goûgm, le café plu- vérisé doit subir l'action alternative de la vapeur s'échs ppant sous pression etde l'eau chaude. Dans les réchauds actuels à circulation d'eau continue, l'appareil doit à 1 a mise -en circuit être compl étement rempli d'eau et 1 a sortie doit restée constament ouverte afin d'éviter les dangers de fusion du conducteur de chauffage ainsi qu'une explosion. Faute d'un collecteur de vapeur, il n'est plus possible de réaliser une formation efficace de vapeur et par conséquent un débit de vapeur pure.
Lors d'un chauffage intense, on n'obtient que l 'échappem- ent d'un mélange d'eau et de vapeur. Un autre inconvénient réside dans le fait que l'intensité de chauffage assez élevée n'est pas toujours entièrement utilisée lors du procédé de travail relativement court.
Au repos il se produit par conséquent un effet de chauffa retardé qui provoque à la sortie un jet non voulu d'eau etde vap eu r. ,
Suivant l'invention on évite ces inconvénients par l'adjonction au réchaud à circulation permanente en dehors de la chambre à eau d'un collecteur de vapeur qui se trou- ve au dessus de la sortie et qui communique avec l'appa- reil d'extraction. Afin d'éviter à la sortie ce jet d'eau. et de vapeur même si l'appareil est au repos, on munit celle-ci d'un robinet etc., commandé desmodromiquement, par l'organe d'entrée d'eau et le comutateur électrique de sorte qu'il puisse seulement être amené dans la position d'arrêt après avoir interrompu l'amenée de l'eau et
