La présente invention a pour objet un procédé de fabrication de là bière dans lequel il est fait usage de malt préalablement débarrassé de la paille qu'y est mêlée après mouture .

Ce sont ces inconvénients qre l'inventeur veut éviter par 1 'emploi de scn nouveau procédé de brassage.

lorsque le trempe est terminée ,on arrête le 'brassage pen- dant quelques minutes et on laisse s'écouler le moût par un large robinet placé au fond de la chaudière; on agit de même à la fin de chaque trempe , lorsque le malt est soumis à plusieurs trempes successives; afin de se soustraire à l'obligation de filtrex le moût après la saccharification finale on provoque, par une acidification convenable,la saccharification complète des matières amylacées qu'il contient ; ces substances,qui res- tent dans le moût norfiltré, sont rendues inertes et aptes à subir,sans réagir,les opérations subséquentes de la fabrication: le môut est ensuite perte à l'appareil dans lequel il su- bit la cuisson ordinaire;
la réfrigération qui suit la cuisson, s'opère dans l'appa- reil de cuisson lui-même,qui,à cette fin,est garni d'un serpen- tin réfrigérant; le liquide est soumis à une agitation d'intensité convenable et à un barbotage d'air pur sous pression,

amené par un dispositif diviseur approprié; enfin,le liquide est décanté à froid ; afin d'éviter toute contamina.tion,lesappareils de filtration sont stérilisés.

La nouvelle méthode présente les avantages ci-après: suppression du goût âcre que donnent actuellement à la bière les pailles mêlées à la farine; suppression de la coloration grisâtre due aux pailles et nui- sant à l'aspect de la bière; réduction de la force motrice nécessaire au brassage,l'ab- sence de pailles dans le brsssin donnant lieu à une réduction de la résistance opposée au brassage ; économie provenant de la suppression des bacs décanteurs, des cuves guillcires,du réfrigérant,du filtre à trouble et la réduction du filtre-presse ; production de bières.de meilleure qualité,pour une même qualité d'orge,grâce à l'emploi de méthodes de fabrication,. plus rationnelles;
économie provenant de ce que,vu l'absence de pailles et la réduction du volume des résidus,on pourra utiliser des appareils plus petits pour le sèchage de ceux-ci; possibilité d'opérer la cuisson sous pression des m8uts troubles; enfin,les pailles enlevées au cours de la mouture ou après peuvent être vendues à part ou on pourra les mélanger aux rési- dus de fabrication de façon à obtenir une drêche de composition ordinaire;
