Abstract

1. Process for proteolysis of plasma proteins which enables hydrolyzates without a bitter flavor to be obtained, characterized in that the proteolysis of the plasma proteins is performed by thermolysin in the presence of calcium ions in an aqueous reaction medium of pH 5 to 7 at a temperature below or equal to 80 degrees C.
