  Verfahren zur Gewinnung von   Eiweissstoifen   auf biologischem Wege. 



   Es ist bekannt, dass man durch Züchtung von Mucorarten, insbesondere Mueor spinosus und Mucor stolonifer in   Zuckerlösungen   oder auch in zuckerarmen Abwässern wie Sulfitablauge Fett gewinnen kann. 



   Die Erfindung betrifft nun die Gewinnung von Eiweiss mit Hilfe der genannten Schimmelpilze, u. zw. geht die Erfindung von der bekannten Tatsache aus, dass die   Pilzsubstanz   hohen Eiweissgehalt aufweist und besteht darin, den erwähnten Schimmelpilzen solche Wachstumsbedingungen darzubieten, dass die Pilzsubstanz erhöht und die Pilzernte ausser zur Gewinnung von Fett namentlich zur Gewinnung von Eiweisskörpern herangezogen wird. Die Vermehiung der eiweisshaltigen Pilzsubstanz ist nach Feststellung des Erfinders abhängig von der Temperatur, von der Azidität der   Nährflüssigkeit   und der Menge der stickstoffhaltigen Stoffe und Nährsalze.

   Um also eine ausreichende Eiweissernte aus Schimmelpilzen zu sichern, hat man ausser den die Fettbildung beeinflussenden Bedingungen noch auf einen bestimmten Säuregrad und die Wasserstoffionenkonzentration der als Pilznahrung in Betracht kommenden organischen Nährflüssigkeit zu achten. Am günstigsten ist eine Azidität von   0'03   bis   0'05   normaler Säure, die durch teilweise Absättigung der mit stickstoffhaltigen Stoffen und Nährsalzen versetzten Zuckerlösung, des Abwassers od. dgl. mit Kalziumkarbonat und durch passende Wahl der Kochdauer erreicht wird.

   Züchtet man Mucorarten in derartigen Lösungen, so findet ausser starker Fettbildung eine gute Entwicklung des Pilzeiweisses statt, so dass nach dem Extrahieren des Fettes ein   eiweissreicher Rückstand   in guter Ausbeute erhalten wird.

   The invention now relates to the extraction of protein with the help of said molds, u. The invention is based on the known fact that the fungal substance has a high protein content and consists in providing the molds mentioned with such growth conditions that the fungal substance is increased and the mushroom harvest is used not only for the production of fat, but also for the production of protein bodies. According to the inventor, the increase in the protein-containing fungal substance depends on the temperature, the acidity of the nutrient fluid and the amount of nitrogenous substances and nutrient salts.

   In order to ensure a sufficient protein harvest from molds, in addition to the conditions influencing the formation of fat, one has to pay attention to a certain degree of acidity and the hydrogen ion concentration of the organic nutrient liquid that can be used as fungal food. The most favorable is an acidity of 0.03 to 0.05 normal acid, which is achieved by partially saturating the sugar solution mixed with nitrogenous substances and nutrient salts, the waste water or the like with calcium carbonate and by choosing the appropriate cooking time.

   If one cultivates Mucorarten in such solutions, in addition to strong fat formation, there is good development of the fungal protein, so that a protein-rich residue is obtained in good yield after the fat has been extracted.

PATENT-ANSPRUCH : Verfahren zur Gewinnung von Eiweissstoffen auf biologischem Wege, dadurch gekennzeichnet, dass Schimmelpilze, insbesondere Mucor spinosus und Mucor stolonifer in verhältnismässig zuckerarmen, mit stickstoffhaltigen Stoffen versetzten Lösungen, vorzugsweise Abwässern, unter Einhaltung einer niedrigen Azidität, entsprechend etwa 0 03-0'05 normaler Säure, gegebenenfalls unter zeitweiser Zugabe alkalischer Mittel, zur Vermehrung gebracht werden. **WARNUNG** Ende CLMS Feld Kannt Anfang DESC uberlappen**.
