Bestandteilen bestehenden Niederschlag in an und für sich bekannter Weise mit einer ausschliesslich die löslichen Milchsalze enthaltenden Lösung behandelt und so die ursprüng- liche Milch ohne Milchzuckergehalt wieder herstellt. Da aber durch das Fehlen des Milchzuckers der Extraktgehalt der Milch erheblich geringer wurde, ersetzt man denselben durch Zusatz von eventuell mit Wasser gewaschenem Rahm von 50-600/0 Fettgehalt.
Die zum Lösen bzw. Aufquellen des Kaseinniederschlages verwendete Salzlösung-stellt man am besten her durch Lösen von 4 5 ° einer Mischung von Kaliumphosphat, Kalium. karbonat, Chlornatrium und Chlorkalium in 0'6 l Wasser, für den Liter fertiger Milch.
Das fertige Präparat muss nahezu neutral oder amphoter reagieren.

1. Verfahren zur Herstellung einer zuckerarmen Milch für Diabetiker, gekennzeichnet dadurch, dass man Rahm, Vollmilch oder Magermilch auf geeignete Weise z. B. durch Kohlendioxyd unter Druck, Filtration über Tonzellen ohne Zersetzung oder chemische Ver- änderung des Kaseinkalkes in die wasserlöslichen und suspendierten Bestandteile trennt und letztere in einer alkalischen Salzlösung, welche bloss die wasserlöslichen Salze der Milch in entsprechendem Verhältnisse enthält, aufquellen lässt, wobei der Mischung in be-
