Abstract

Un concentrado sazonado que tiene una actividad del agua (Aʷ) que varía entre 0,15 y 0,6 y que comprende: a) 40 - 55% en peso del componente graso, donde dicho componente graso tiene un contenido de grasa sólida a 20ºC (N₂₀) del 6 al 20%; b) 3 - 30% en peso de un componente cristalino en partículas, seleccionado entre NaCl, KCl, sacarosa, glutamato monosódico y combinaciones de los mismos, lo cual incluye al menos 3% en peso de la composición de sal cristalina, seleccionada entre NaCl, KCl y combinaciones de las mismas; c) 10 - 50% en peso de material vegetal en partículas, seleccionado entre hierbas, especias, verduras y combinaciones de los mismos; d) 0 - 22% en peso de un componente de almidón en partículas; e) hasta 10% en peso de agua; donde la combinación de los componentes a) a e) constituye al menos el 80% en peso del concentrado sazonado y donde el componente graso contiene: 4 - 20% en peso de triglicéridos con un alto punto de fusión, seleccionados entre PPP, POP y PPO, donde P representa ácido palmítico y O representa ácido oleico y 50 - 94% en peso de triglicéridos con un bajo punto de fusión, seleccionados entre UUU, USU y UUS, donde U representa ácido graso C₁₆₋₂₂ insaturado y S representa ácido graso C₁₀₋₁₈ saturado.
