Abstract
Una composición para revestir una confitura congelada, la composición comprende, expresado en % en peso sobre la base del peso total del revestimiento, 35 a 75% en peso de grasa, que comprende una mezcla de grasa de grasa medianamente blanda y aceite liquido, y 25 a 65% en peso de sólidos que no son grasa, en donde la composición de revestimiento comprende menos de 40% en peso de ácidos grasos saturados, preferentemente, menos de 30% en peso de ácidos grasos saturados, 9 a 50% en peso, preferentemente, 15 a 30% en peso de ácido graso monoinsaturado y menos de 30% en peso, preferentemente, menos de 15% en peso de ácido graso poliinsaturado y en donde la grasa medianamente blanda tiene 35 a 50%, preferentemente, 40 a 45% de grasa sólida a 20ºC, y la grasa medianamente blanda tiene menos de 55% en peso de ácidos grasos saturados. Además, un proceso para elaborar esta composición y una confitura congelada al menos parcialmente revestida con la composición.
