Abstract

Dicha composición produce una capa semipermeable alrededor de las frutas evitando así el escaldado superficial e inhibiendo parcialmente la producción de etileno, además de mejorar otros parámetros de conservación de las mismas, tales como la firmeza y aumentando de esta manera el tiempo de conservación de dichas frutas recubiertas.
