Abstract

The present disclosure is related to an edible coating based on nanometric dispersions, wherein said nanometric dispersions are formed by nanocapsules, and such coatings are applied to freshly cut fruits and vegetables contributing to increase their shelf life. Said coatings comprise: a dispersion which can be made of nanocapsules or solid lipid nanoparticles (SLN) and a polymer as a supporting material. Additionally includes: a plasticizer to contribute to homogenize the distribution of said coating on the surface of the fruit or vegetable forming a thinner, flexible film; so the amount of retained coating in said fruit or vegetable is reduced; a surfactant; and a preservative to increase their shelf life.
