Abstract

Se describe un método electroanalítico para predecir la oxidabilidad de un vino o mosto. El método incluye registrar una señal electroquímica de una muestra del vino o mosto; comparar una firma electroquímica de la señal electroquímica obtenida en el paso a) con curvas de referencia de voltamogramas obtenidos de vinos o mostos con oxidabilidad conocida; y predecir la oxidabilidad de la muestra ensayada en base a la comparación. También se describen marcadores para predecir la oxidabilidad de un vino o un mosto y el uso de electroquímica para predecir la oxidabilidad de un vino o un mosto. También se describen un método para predecir el suministro de oxígeno total óptimo para almacenar un vino o un mosto en un recipiente; un método para la maduración y/o envejecimiento del vino y; un método para seleccionar un cerramiento óptimo para almacenar un vino o mosto en un recipiente.
