Abstract

Una fracción de proteína y una fracción de grasa estable a la oxidación son recuperadas desde recortes de carne. Los recortes son triturados, mezclados con un ácido apto para el consumo humano con un pH de 3,6 a 4,4, para formar una fracción de proteína líquida y una fracción de grasa sólida. La fracción líquida es mezclada con un álcali apto para el consumo humano, para precipitar la proteína. Desde la fracción de proteína se recupera una fracción rica en mioglobina que es mezclada con la proteína precipitada.
