Abstract

Un concentrado alimenticio salado deshidratado que comprende: a) entre 30% en peso y 70% en peso de NaCl; b) entre 0,05% en peso y 2% en peso de un ion de hierro seleccionado entre el grupo que comprende Fe2+ y Fe3+ y mezclas de ellos, y dicho ion de hierro se obtiene de un compuesto de hierro agregado que se disuelve en una solucion acuosa, c) entre 0,35% en peso y 7,0% en peso de un compuesto ácido seleccionado entre el grupo integrado por ácido cítrico, ácido ascorbico, ácido málico, ácido tartárico, ácido láctico y mezclas de ellos, donde todos los % en peso se basan en el peso del concentrado alimenticio salado deshidratado total, donde la relacion entre los iones de ácido y los iones de hierro a nivel molecular oscila entre 1:1 y 10:1, y donde el concentrado es un concentrado seleccionado entre el grupo de concentrados compuesto por caldo concentrado, sopa concentrada, salsa concentrada y jugo de carne concentrado.
