Reivindicacion 1: Bebida instantánea en polvo caracterizada porque comprende partículas en polvo, caracterizadas porque tiene una porosidad de al menos 55%, más de preferencia al menos 65%, aun más de preferencia al menos 70%. Reivindicacion 11: Método para la elaboracion de una bebida instantánea en polvo, caracterizado porque comprende las etapas de: a) someter un extracto de bebida instantánea a una presion de 50 a 400 bar, de preferencia de 150 a 400 bar, b) agregar gas al extracto presurizado, y c) asperzar y secar el extracto para formar una bebida instantánea en polvo.
