Abstract
Un proceso para elaborar una jalea de frutas que comprende los pasos deLa) mezclar una fuente de pectina con una solucion acuosa de fruta, a una temperatura inferior a los 130°C, preferentemente inferior a los 100°F, para formar un producto base de jalea; y (b) agregar solucion humeda de solidos solubles al producto base de jalea para formar una jalea de frutas.
