Abstract

Un proceso para modificar carbohidratos mediante su reaccion con radicales de hidroxilo. Los radicales de hidroxilo pueden ser formados por la foto-reaccion de agua, peroxido u otra sustancia química adecuada que contenga hidroxilo, o mediante la descomposicion electroquímica de agua, peroxido y otra sustancia química adecuada que contenga hidroxilo. También las composiciones y productos que contengan carbohidratos modificados mediante el proceso.
