Abstract

Método para preparar un intermedio de media luna (croissant) que comprende moldear el producto intermedio en forma triangular con un borde principal y dos bordes opuestos y realizar al menos un corte 202 substancialmente perpendicular al borde principal que no cruce ninguno de los bordes. El moldeado y corte pueden ser simultáneos, con un aparato automatizado. Además comprende enrollarlo envolviendo una cola alrededor del borde principal y un repulgue 122 entre los extremos. El producto correspondiente comprende una porcion de masa triangular con al menos un corte y repulgue y tiene 4 a 10 mm. de espesor. Presenta así un alivio de tension para no perder el repulgue durante el horneado. Se aplica en el campo de productos de masa para ser horneados, cocidos o fritados.
