Abstract

Se proporcionan tiras fritas y un proceso de preparacion relacionado, en donde las tiras se producen a partir de una masa a base de maíz. La masa a base decomprende una matriz de alimento de maíz y harina de maíz de diferentes tamanos de gránulo o partícula, en mezcla con agua y constituyentes opcionalessaborizantes y de aderezo, para formar una masa relativamente espesa que tiene una textura adecuada para extrusion y corte para formar tiras elongadas quetienen un tamano y una forma que conforman generalmente a papas fritas convencionales de papa. Las tiras de masa de maíz formadas y cortadas pueden ser freídasinicialmente en aceite caliente, y luego congeladas. Las tiras de maíz congeladas posteriormente se preparan para acabado para el consumo, con preferencia porfritura de acabado en aceite caliente. Las tiras de maíz preparadas acabadas tienen un sabor de bocadillo de maíz, en combinacion con una textura definida poruna superficie exterior crocante que cubre un interior humedo y harinoso.
