Abstract

Proceso de rociado con agua que proporciona humedad a productos alimenticios tipo chip para hacer que se ricen al ser secados. El grado derizado tiene relación directa con la cantidad de humedad aplicada a la cara superior de los chips. Luego de rociado con agua, el producto puede sertrasnferido a una transportadora donde se les deposita una cortina contínua de sal sobre la cara superior. La cara superior rociada con agua sirve deadherente para la sal.
