Abstract
L'invention concerne un procédé de refroidissement conçu pour être utilisé dans des machines à café, le procédé comprenant les étapes suivantes : la préparation d'une quantité de café; la poursuite de la phase d'infusion (extraction); le refroidissement du café préparé avant son écoulement, le refroidissement ayant lieu à une température comprise entre -10 et +10 °C 10 pendant un temps correspondant à 25-35 % du temps total d'écoulement; et l'écoulement du café sans autre refroidissement. L'invention concerne également un système de refroidissement destiné à être utilisé sur les machines à café pour mettre en œuvre le processus susmentionné.
