[レンジ焼け防止剤1]
本実施形態のレンジ焼け防止剤1は、電子レンジ加熱で生じる食品のレンジ焼けを防止するためのレンジ焼け防止剤であって、前記レンジ焼け防止剤1が、油脂と乳化剤を含有する油性成分と、増粘多糖類を含有し、前記レンジ焼け防止剤1は、100~13500mPa・s(25℃)の粘度を有する乳化物、又は加水して100~13500mPa・s(25℃)の粘度を有する乳化物として用いるものである。
本実施形態のレンジ焼け防止剤1は、レンジ焼け防止剤1そのものが乳化物の状態、又は、乳化して乳化物として用いるものである。乳化して用いる場合は、レンジ焼け防止剤1を水と混合して乳化物とする。なお、乳化物は、特に限定するものではないが、水中油型(O/W型)乳化物、又は油中水型(W/O型)乳化物、あるいはW/O/W型乳化物などが挙げられ、好ましくは水中油型乳化物である。
<油脂>
本実施形態のレンジ焼け防止剤1は、油性成分を含み、油性成分中に油脂を含む。油脂としては、動植物油脂、グリセリンと脂肪酸から合成した油脂及びそれらの分別油、エステル交換油、水素添加油などを単独あるいは組み合わせて用いることができる。
動植物油脂としては、例えば、大豆油、なたね油、ひまわり油、オリーブ油、サフラワー油、コーン油、綿実油、米油、ゴマ油、エゴマ油、亜麻仁油、落花生油、グレープシード油、牛脂、乳脂、魚油、ヤシ油、パーム油、パーム核油などが挙げられる。
グリセリンと脂肪酸から合成した油脂としては、炭素数8~10の直鎖状飽和脂肪酸を含有する油脂、例えば中鎖脂肪酸トリグリセリド(MCT)などが挙げられる。
分別油としては、パームオレイン、パームスーパーオレイン、パームステアリン、パームミッドフラクションなどのパーム油の分別油が挙げられる。
エステル交換油としては、パーム油あるいはパーム油の分別油と他の液状油脂のエステル交換油、あるいはMCTと植物油などとのエステル交換油を用いることができる。
水素添加油は、動植物油、動植物油の分別油の水素添加油の他、エステル交換油の水素添加油などが挙げられる。
本実施形態のレンジ焼け防止剤1は、油性成分中に乳化剤を含む。乳化剤としては、グリセリンモノ脂肪酸エステル、ポリグリセリン脂肪酸エステル、ポリグリセリン縮合リシノール酸エステル、有機酸モノグリセリド、ソルビタン脂肪酸エステル、ショ糖脂肪酸エステル、ポリソルベート、プロピレングリコール脂肪酸エステル、レシチンなどを用いることができる。

本実施形態のレンジ焼け防止剤1は、増粘多糖類を含有する。増粘多糖類とは、水に溶解すると粘度を示したり、ゲル化したりする性質をもった水溶性の高分子物質であり、例えば、キサンタンガム、ガラクトマンナン、タマリンドシードガム、カラギーナン、寒天、ペクチン、アラビアガム、プルラン、大豆多糖類などが挙げられ、これらの増粘多糖類の1種又は2種以上を用いることができる。好ましくは、キサンタンガム、ガラクトマンナンから選ばれる1種、又は2種以上である。また、ガラクトマンナンとしては、グアーガム、ローカストビーンガムが好ましい。
本実施形態のレンジ焼け防止剤1は、乳化物として、又は加水して100~13500mPa・s(25℃)の粘度とした乳化物として、用いる。そのため、レンジ焼け防止剤1は、水を含有してもよい。レンジ焼け防止剤1中の水含有量は、0~99.8質量%が好ましい。レンジ焼け防止剤1が乳化物の場合、水分含有量は、50~99.8質量%が好ましく、84~99.5質量%がより好ましく、85~99.5質量%がさらに好ましい。
また、100~13500mPa・s(25℃)の粘度を有する乳化物としては、水分含有量は、50~99.8質量%が好ましく、84~99.5質量%がより好ましく、85~99.5質量%がさらに好ましい。
本実施形態のレンジ焼け防止剤1は、上記成分以外にも、レンジ焼け防止剤に一般的に配合される原材料を使用することができる。具体的には、例えば、エタノール、pH調整剤、調味剤、着色料、香料、酸化防止剤、糖類、多価アルコール、安定剤、乳化剤等を使用することができる。なお、多価アルコールとしては、グリセリン、ソルビトール、還元水あめなどが挙げられ、増粘多糖類は含まない。これらの成分の量は、本実施形態の効果を損なわない限り任意の量とすることができるが、例えば、レンジ焼け防止剤1中に10質量%以下含有させることができ、好ましくは3質量%以下、より好ましくは0~3質量%、さらに好ましくは0~1質量%含有させることができる。また、多価アルコール及びエタノールは、水溶液の物性を変えるため、乳化物中の水が少ない場合、乳化物中の含有量が少ない方が好ましい。例えば、乳化物中の水量が83質量%以下では、多価アルコール及びエタノールの含有量は、3質量%未満であり、より好ましくは0~2質量%以下であり、さらに好ましくは0~1質量%であり、最も好ましくは含まないことである。
本実施形態のレンジ焼け防止剤1は、食品に用いるが、食品とは、冷凍食品及び冷蔵・チルド食品を含む。冷凍食品は、電子レンジで解凍及び/又は加熱され、冷蔵・チルド食品は、電子レンジで加熱されて、食すことができる。
これらの食品としては、澱粉含有食品、野菜類、魚類、甲殻類、肉類等が挙げられる。澱粉含有食品としては、そば、うどん、中華麺、パスタ等の麺類、及び、ご飯、チャーハン、カレーライス、丼物等の飯類、餃子などの麺皮加工品が挙げられる。
本実施形態のレンジ焼け防止剤1は50~13500mPa・s(25℃)の粘度を有する乳化物として、これらの食品の表面に適用して用いることができる。レンジ焼け防止剤1の食品表面の適用量は、食品100質量部に対して、乳化物として0.1~7質量部となるように塗布することが好ましく、0.2~5.0質量部となるように食品表面に適用することがより好ましい。
本実施形態の食品のレンジ焼け防止方法は、前述のレンジ焼け防止剤1を用いて、食品の表面に適用することである。即ち、本実施形態の食品のレンジ焼け防止方法は、電子レンジ加熱による食品のレンジ焼け防止方法であって、100~13500mPa・s(25℃)の粘度を有する乳化物を、電子レンジで加熱する前に食品の表面に適用し、前記乳化物が、前述のレンジ焼け防止剤1、又はレンジ焼け防止剤1を加水した乳化物であり、乳化物中の油脂、乳化剤、増粘多糖類の総量が、食品100質量部に対して、0.08~3質量部となることを特徴とする。
本実施形態の冷凍食品の製造方法は、前述の食品のレンジ焼け防止方法を用いて、冷凍食品の製造を行う。即ち、本実施形態の冷凍食品の製造方法は、電子レンジで加熱して食す冷凍食品の製造方法であって、100~13500mPa・s(25℃)の粘度を有する乳化物を、電子レンジで加熱する前に食品の表面に適用する工程、次いで食品を冷凍する工程を含み、前記乳化物が、前述のレンジ焼け防止剤1、又はレンジ焼け防止剤1を加水した乳化物であり、乳化物中の油脂、乳化剤、増粘多糖類の総量が、食品100質量部に対して、0.08~3質量部となることを特徴とする。詳細は、前述の[レンジ焼け防止剤1]及び[食品のレンジ焼け防止方法]で述べた通りである。
[レンジ焼け防止剤2]
本実施形態のレンジ焼け防止剤2は、電子レンジ加熱で生じる澱粉含有食品のレンジ焼けを防止するためのレンジ焼け防止剤であって、前記レンジ焼け防止剤2が、澱粉含有食品の加熱調理工程と、冷凍工程又は冷蔵工程の間で、澱粉含有食品へ塗布するものであり、レンジ焼け防止剤2中に油脂を70~99.9質量%、乳化剤を0.1~30質量%含有し、前記乳化剤が、プロピレングリコール脂肪酸エステル、HLB2~8のポリグリセリン脂肪酸エステル、ポリグリセリン縮合リシノール酸エステル、有機酸モノグリセリド、HLB1~3のショ糖脂肪酸エステル、HLB2~8のソルビタン脂肪酸エステルから選ばれる1種又は2種以上である。
本実施形態のレンジ焼け防止剤2は、加熱調理工程を経た澱粉含有食品へ塗布し、その後、冷凍工程又は冷蔵工程を行い、冷凍澱粉含有食品とするものであり、冷凍工程の前に塗布することで、レンジ焼け防止効果が得られる。なお、加熱調理工程に本実施形態のレンジ焼け防止剤2を用いる場合、澱粉含有食品中に吸収され、十分な効果を得ることが期待できないため、加熱調理工程後に塗布する。
なお、食品の表面上の油脂量は、ヘキサン等を含む脱脂綿で食品表面を軽くふき取り、脱脂綿へ移行した油分を測定することで確認することができる。
本実施形態のレンジ焼け防止剤2は、油脂を70~99.9質量%含む。油脂としては、動植物油脂、グリセリンと脂肪酸から合成した油脂及びそれらの分別油、エステル交換油、水素添加油などを単独あるいは組み合わせて用いることができる。それぞれの油脂の種類については第1の実施形態と同様である。
本実施形態のレンジ焼け防止剤2は、特定の乳化剤を0.1質量%以上含むことで、レンジ焼け防止効果を発現することができる。そのため、本実施形態のレンジ焼け防止剤2は、プロピレングリコール脂肪酸エステル、HLB2~8のポリグリセリン脂肪酸エステル、ポリグリセリン縮合リシノール酸エステル、HLB1~3のショ糖脂肪酸エステル、HLB2~6のソルビタン脂肪酸エステルから選ばれる1種又は2種以上である乳化剤を0.1~30質量%含有する。
本実施形態のレンジ焼け防止剤2は、上記成分以外にも、レンジ焼け防止剤に一般的に配合される原材料を使用することができる。具体的には、例えば、調味剤、着色料、香料、酸化防止剤、安定剤、上記以外の乳化剤等を使用することができる。これらの成分の量は、本実施形態の効果を損なわない限り任意の量とすることができるが、例えば、レンジ焼け防止剤2中に10質量%以下含有させることができ、好ましくは3質量%以下、より好ましくは0~3質量%、さらに好ましくは0~1質量%含有させることができる。また、水溶性分は、レンジ焼け防止剤2に可溶化状態で含むこともできる。
本実施形態の電子レンジ加熱用冷凍澱粉含有食品の製造方法は、前述のレンジ焼け防止剤2を、澱粉含有食品の加熱調理工程後に、澱粉含有食品100質量部に対して0.5~10質量部塗布する工程を経て、冷凍工程又は冷蔵工程を行うものである。
また、電子レンジ加熱用冷凍澱粉含有食品としては、そば、うどん、中華麺、パスタ等の麺類、及び、ご飯、チャーハン、カレーライス、丼物等の飯類、餃子などの麺皮加工品等が挙げられる。
レンジ焼け防止剤1を表1~3の配合で調整した。用いた、油脂、乳化剤、増粘多糖類は下記のとおりである。
MCT(中鎖脂肪酸トリグリセリド:日清オイリオグループ株式会社製:構成脂肪酸 カプリル酸60%、カプリン酸40%)、
菜種油(精製キャノーラ油 商品名「日清キャノーラ油」:日清オイリオグループ株式会社製)
ジグリセリンモノオレイン酸エステル(理研ビタミン株式会社製 商品名「ポエムDO-100V」:HLB7.3)
デカグリセリンペンタオレイン酸エステル(太陽化学株式会社製 商品名「サンソフトQ-175S」:HLB7)
キサンタンガム(太陽化学株式会社製 商品名「ネオソフトXR」)
グアーガム(ユニテックフーズ株式会社 商品名「VIDOGUM GHK175」)
比較例1-5、実施例1-1~1-15は、表1~3の配合で、油性成分の油脂と乳化剤とを混合した。さらに油性成分に増粘多糖類を分散させた後、水と混合して乳化物とし、サンプルを得た。
各サンプルの25℃での粘度を、ブルックフィールド粘度計(BM型粘度計、東機産業株式会社製 商品名「VISCOMETER TVB-15」)にて、回転開始後から1分後の粘度を測定した。
(うどんの電子レンジ加熱)
市販の冷凍うどん(テーブルマーク株式会社製)を1分間熱湯で解凍した後、冷水で冷却し、水切りを行った。得られたうどんに対して、表1~3の配合量でサンプルを添加、混合し、うどん表面に塗布した。食品100質量部に対する、サンプルの塗布量(質量部)と、油脂、乳化剤、増粘多糖類の総量(質量部)を表1~3に示した。
加熱したうどんの破断強度を測定し、レンジ焼けの評価を行った。破断強度は、Texture Analyzer(型番「TA.XA Plus」、Stable Micro Systems Ltd製)を用いて測定(測定条件:降下速度 1mm/秒、治具 Blade Set、Strain(ひずみ)が 98%で停止するよう設定))した。得られた破断強度(98%まで破断した場合の最大強度を測定)を表1~3に示した。
なお、破断強度の数値が高いものほど、レンジ焼けが進み、うどんが硬くなっていることを示している。
破断強度2001g以上 :×(不合格)
破断強度1601~2000g :●(合格)
破断強度1201~1600g :〇(合格:良好)
破断強度1200以下 :◎(合格:優良)
表4~6の配合のレンジ焼け防止剤2を準備した。比較例2-3,実施例2-1~2-15は、乳化剤と油脂を加熱混合(40~60℃)してレンジ焼け防止剤2とした。なお、用いた、油脂、乳化剤は下記のとおりである。

(麺の電子レンジ加熱)
市販のパスタ(乾麺:株式会社日清製粉ウェルナ製)を7分間熱湯で茹でた後、冷水で冷却し、水切りを行った。得られたパスタに対して、表4~6の配合量で調整したレンジ焼け防止剤2をパスタ100質量部に対して2質量部添加し、混合した(パスタ表面に塗布した)。なお、参考例2-1は、レンジ焼け防止剤2を使用しないで製造した例である。
加熱したパスタの破断強度を測定し、レンジ焼けの評価を行った。破断強度は、Texture Analyzer(型番「TA.XA Plus」、Stable Micro Systems Ltd製)を用いて測定(測定条件:降下速度 1mm/秒、治具 Blade Set、Strain(ひずみ)が98%で停止するよう設定))した。得られた破断強度(98%まで破断した場合の最大強度を測定)を表4~6に示した。
なお、破断強度の数値が高いものほど、レンジ焼けが進み、パスタが硬くなっていることを示している。

Claims (11)
- 電子レンジ加熱で生じる食品のレンジ焼けを防止するためのレンジ焼け防止剤であって、
前記レンジ焼け防止剤が、油脂と乳化剤を含有する油性成分と、増粘多糖類を含有し、
前記レンジ焼け防止剤は、100~13500mPa・s(25℃)の粘度を有する乳化物、又は加水して100~13500mPa・s(25℃)の粘度を有する乳化物として用いるものである、
レンジ焼け防止剤。 - 前記油性成分中に油脂を20~80質量%、乳化剤を10~80質量%含有し、
該乳化剤のHLBが3~10の乳化剤である、
請求項1に記載のレンジ焼け防止剤。 - 前記油脂が、油脂の構成脂肪酸中に炭素数8~10の直鎖状飽和脂肪酸を30質量%以上含有し、
前記乳化剤が、グリセリンモノ脂肪酸エステル、ポリグリセリン脂肪酸エステル、ポリグリセリン縮合リシノール酸エステル、有機酸モノグリセリド、ソルビタン脂肪酸エステル、ショ糖脂肪酸エステル、ポリソルベート、プロピレングリコール脂肪酸エステル、レシチンから選ばれる1種又は2種以上の乳化剤であり、
前記増粘多糖類が、キサンタンガム、ガラクトマンナンから選ばれる1種又は2種以上である、
請求項1に記載のレンジ焼け防止剤。 - レンジ焼け防止剤中の油性成分と増粘多糖類の質量割合が油性成分:増粘多糖類=300:1~3:1である、
及び/又は前記乳化物中の増粘多糖類が0.01~2.5質量%である、
及び/又は前記油性成分中の乳化剤において、乳化剤の構成脂肪酸の60質量%以上が、不飽和脂肪酸である、

- 電子レンジ加熱による食品のレンジ焼け防止方法であって、

前記乳化物が、請求項1~5のいずれか1項に記載のレンジ焼け防止剤、又はレンジ焼け防止剤を加水した乳化物であり、
乳化物中の油脂、乳化剤、増粘多糖類の総量が、食品100質量部に対して、0.08~3質量部となるように適用する、
食品のレンジ焼け防止方法。 - 電子レンジで加熱して食す冷凍食品の製造方法であって、
